Hello Everyone here's some tips- For the cake itself you add 2 sticks unsalted butter (Room temp softened). For the frosting you add 4 sticks unsalted butter (Room temp but Butter should still be firm). If you don't like coconut, omit it for this recipe. Add 1 teaspoon almond extract to the cake batter and 1/2 teaspoon Almond extract to the frosting. This would make a good white cake with Swiss buttercream. Thanks!

Charlie, not to tell my age, but most black women (back when I was a girl) did not have stand mixers. I was my mother's stand mixer. So I can contest to having to stir butter and sugar together until it looked like pudding or until she said, "that's good enough." After that she took over everything else. I really like your channel. Young people these day don't understand what it means to cook or bake without all the frills . I thank God that I learned cooking and baking the "hard way!"

So I originally hit Charlie up and asked about just a white cake and he was so helpful w tips and pleasant to chat with. I made a different recipe that requires too much almomd extract and he explained the portion sizes to me and why the cake turned out like it did. So I made this cake without the coconut, followed it to the letter. When I tell you this cake was the BOMB!! My family raved about it being so moist and delicious. All I could do was smile, My Baking Angel showed out again. Charlie O just love all your recipes, and now your hospitality. You made me feel at home and so comfortable making this cake. You rock!! Thanks again Love!!

Just made this cake today OMG it is delicious!!! I made one small error , when doing egg whites, my stove gets hot real quick couldnt hardly hold the bowl it raised 135 deg real quick. Thought I was going to have to restart new batch but I went ahead and finished it and it still turned out amazing! I set bowl in cold water to get eggs to cool faster. I love this frosting. Will be used on other cakes. Not a big fan of just plain butter cream always too sweet but, this is not over sweet at all has a great balance. Thank you for sharing !!! Can't wait to make more of you recipes !! God Bless you !!! 🙂

Just watched you make this amazing coconut cake. It made my mouth water. I always thought my Mom's coconut scratch cake was the best I'd ever tried..She taught me how to make it before she passed away. She was known for the Coconut Queen by our extended family. That was what everyone wanted her to make. But I know, if she had known about all the things you added to yours, she would agree with me, even though I haven't baked it (yet). I've already decided this is the Christmas cake for our family this year of 2020. I want to tell you how very much I appreciate all the work you put into all your recipes and the time you take to explain everything step by step. I've found noone else on you tube to come up with any recipes that are as good or better than any of yours. You take so much time and you're so thorough with everything you make. I love you Charlie and I appreciate all you do and all you share with all of us out here. I also love love love your big smile you always have. You are one in a million. Thank you Thank you. Charlie, amazing recipe, thank you for sharing and for the wonderful tutorial. I looked and looked for a similar recipe for weeks before Christmas. Only this morning found yours! This looks so much like the cake my Grandmother and Mother made, and brings back such fond memories.
