    If Molly were a dish, this would be it. This recipe contains three of her very favorite things: meatballs, herbs, and dill pickles. The ingredients may be vast, but please do not let that deter you from making it!! Just make sure you have a nice sharp knife--we’ll be honing our knife skills on the large quantity of herbs which you’ll use in both the pickle salsa and meatballs. In the end, extra-large balls get plopped atop a steaming bowl of pickle rice and smothered in more salsa and salty yogurt sauce for serving. What can I say?? I like big balls and I CANNOT LIE!     Ingredients :
    PRODUCE
    2-3 bunches mixed tender herbs (cilantro, dill, parsley, and/or mint)
    1 English cucumber
    4 scallions
    1 garlic clove
    PANTRY
    8 baby dill pickles, plus 3 tablespoons pickle brine
    ½ cup plus 1 tablespoon olive oil, plus more for drizzling
    ½ teaspoon red pepper flakes
    Kosher salt, freshly ground black pepper
    1 tablespoon coriander seeds (or 2 tsp ground coriander)
    1 tablespoon fennel seeds
    1 cup panko
    ¾ teaspoon ground cinnamon
    2 cups long grain white rice
    DAIRY
    2 large eggs
    1 cup whole milk yogurt
    MEAT
    1 ½ pounds ground meat, such as chicken, turkey, pork, lamb, and/or beef

    Oven is set to 450 degrees F. Roast, turning once halfway through, until meatballs are deeply golden on the sides making contact with the baking sheet, about 16-18 minutes. The meatballs should be firm, but with some bounce when you press on them gently!

    Molly, I gotta say, I subbed the meat with sautéed blitzed up mushrooms (maitake, shiitake and king oyster), grated extra firm tofu and cannellini beans, and them balls turned out deeelicious!

    We made this with lamb/turkey meatballs. Wasn’t sure how that combo was going to come out but EVERYTHING (especially that pickle salsa) was so good we made it again the next day. Thank you for a wonderful recipe!!

    I watched this video a few days ago and had to make it immediately!!! So so good! I used equal parts lamb and turkey and with the fennel and coriander seed the balls were so tasty!

    It’s such a simple trick, but putting the baking sheet on the bottom of the oven blew my mind. Molly Baz coming thru with the fucking tips.

      try using the broiler! I haven't tried using the oven floor, but I've been putting mine in the oven set to broil. it browns the top and sides without burning, and the bottoms get a little bit less browned - but still enough.

    I made this with Lamb (dill, parsley, cilantro and some thai basil). The pickled rice was super tasty and the technique of using the bottom of the oven were genius. I would say doing it over again, would use mint with lamb, kick up the amount of fennel and coriander. Ideally marry the meat to the herbs instead of using what you have available. Would sub shallot for green onion in the meatball and if I was making it with pork, would definitely use basil and cilantro over other herbs

    It was a lot of work! But I really loved it. I’d probably use a spice grinder for the coriander and fennel. They really made the balls delicious. And I ate the rice leftovers Cold which is fine but I’d keep the salsa and rice separate until I’m ready to reheat in the future! Very economical and enjoyable!

      I did 400 for 25-30 mins alternating between oven floor and racks to cook the meatball all the way through

    I have an old electric oven with exposed heating elements. How should I cook the balls? Cook in the oven and finish on the stove? The other way around? What temperature(s)?

      I browned my meatballs on one side in an oven safe pan over medium heat (takes about ten minutes, be patient), turned them and finished them in a 200°C oven (middle rack, took another 10 minutes). I checked for doneness with a thermometer.
      I prefer this method because I don't want to put anything on the bottom of my oven. The meatballs came out great.

    I would like to try the meatballs though it looks like way too much herbage in with the meat. As for the salsa, no tomatoes? Very strange. I think that salsa along with the meatballs might be way too much greenery, period. Still, can't know until I try it.

      “Salsa” translates as “sauce” in English and doesn’t necessarily mean there’s going to be tomatoes (in reference to Mexican cuisine). But Molly points out the salsa is more akin to chimichurri (fresh green herbs and olive oil).

      Kofta and many middle eastern cuisines use cinnamon in savory dishes. It´s not at all unusual.

      With all those other flavors going on the cinnamon would be deep background. The "je ne sais quoi" of the dish. I think of, like, a little nutmeg in the mornay sauce.

      @@jcpensve I'm aware. If mint was used in place of dill and preserved lemons in place of dill cucumber pickles I could imagine the cinnamon working. I haven't tasted this though. Maybe it's great.

      Agreed. I made it with the cinnamon, even a smaller amount than stated in the recipe and it still was very noticeable. Not in a good way, though. As much as I love cinnamon I will leave it out next time. Other than that, fantastic recipe!

    I made this last night and it was really good but I will leave out the cinnamon next time. For some reason it stood out like a sore thumb and not in a good way.
    Oh, and please list the ingredients by part of the dish and not category. It's much more practical if I don't want to make all of it (I think the rice and salsa would be great for a vegan meal, the meatballs not so much...)
