Yeah, but why make my own set? A couple of my earliest jobs were in food service, eventually working the front line in a steak and burger restaurant and then as a kitchen supervisor working with the Chef at a Hilton Hotel. (Mad respect for anyone working in the food service industry). I learned back then to appreciate a good knife... hard to stay appreciative when everyone uses the knives, drops them on the floor and sticks wooden handled knives in the dishwasher. So now when I'm cooking for a family crowd and working all 4 corners of the kitchen... I whip out the good knives. They're awesome. You should try making your own... the blade blanks are easy to find!

I got the cooking bug when working for a great chef back more than 40 years ago (I was a hotel kitchen steward), but he showed me then the value of a good knife. It's very cool that you make your own as well. Thanks much for watching our little channel!
