I made this spinach cream side dish today. It turned out really good. I only wish I knew how much seasoning i really needed to put. It kinda taste spicy to me. I'll try it again. I hope it comes out even better next time. Thank you for the recipes!
Finally! Someone making creamed spinach with cream! I can always taste the flour when it's made with a roux and it tastes flat. My grandmother taught my Mom and they taught me to make it with cream. I loved this even as a kid (what kid likes spinach? Me!)! They used onion but I always use shallot like Chef John (my new kitchen guru!). My technique is a bit different and I've never used lemon zest or a clove but I'm definitely going to try it. You won me over, Chef John. New fan, new subscriber. Thank you!!

I don't add cheese at the end but I have topped with lightly toasted slivered almonds (toast in a dry skillet, watch like a hawk!). Lightly toasted almonds are the bacon of the nut world to me! Good on everything!
Love your recipe John! I do the same thing with rapini. I drop the rapini into salted and boiling water, stir for around 5-6 minutes, drain in colander for around 30 minutes, then sauté good fats, with minced shallots, anchovy, butter, avocado oil, sauté until savory and then add the rapini and stir for a couple of minutes. It’s really great cold the next day, inside a baguette sandwich, maybe add some prosciutto and grated mozzarella. You can put it in the salamander.👨🏻🍳

I'm not as keen on the other (traditional) creamed spinach recipe that Chef John does where you make a roux .... I think this simple one is just way better and far less hassle too!

I'll be making, along with a steak my husband is grilling, this creamed spinach and the fondant potatoes. Everyone loves the fondant potatoes. I don't know why those went out of fashion.

I often (I'm a once a week spinach eater) use a large dab of butter in the pan and before the spinach starts too wilt too much I add a bit of brown sugar and a bigish spoonful of seeded mustard (mild) on top... then after a while I add a little milk. I never have cream in the house because it goes out of date before I have a chance to use it. Never even thought of using it with spinach... I will now!

Chef, I went to a restaurant by the name of Vivere here in Chicago and I ordered cremé bruleé(fantastically made), served with the cremé bruleé was some kind of jelly. The food thing about this jelly it's that wasn't sweet out was just perfect. I would love to see a cremé bruleé recipe with a topping as unique as theirs...a fan

I absolutely love spinach either raw, or cooked in foods, but I've never liked it by itself like that as a side. Not because of the taste, because I love the taste of it, but because of it's texture. I really want to try that because it looks SO delicious, but I'm so scared of that texture, lol. One day I might just have to shirk my fear and give this recipe a shot. At the very least, if I can't manage the texture, I can use it as a naan or quiche filling and the amazing taste would remain. :D
One cup cooked spinach has 1380 (grams?) of potassium. So good for you! Believe it or not Fat is good for you too. This is an exceptionally healthy dish. How about for breakfast with eggs on the side?

Chef JOHNNNNNN!!! I realy love your food but for the love of god what do I do to replace heavy creams! I'm lacto sensitive and i can handle smaller quantities of butter (or replace it with yogurt butter) but the heavy creams are like arsenic to my tummy. I abuse greek yogurt but perhaps you have a better idea. BTW i learned to cooke beef b.c o you =D
