Love this series! Please do a mashed potatoes one. There is too much sad mashed potatoes in the world.
That’s due to over-whipping them. Taters get gluey if you over-beat them - that’s why a ricer makes the best mashers.
My mashed tip. Grab those frozen hash browns. Toast them, salt, then finely dice into your mashed. Gives these nice little crunchy salty super potatoey flavoured bits with each bite.

I finallly found the recipe they mentioned in this video, about the Turkey episode, it was precisely the Ghost Pepper Nashville Hot Turkey episode. Its slightly different just due to the cheeses they used, but you can always use the cheeses you want. Anyways, here's a copy and paste from that video for the mac and cheese.
Step 3: Make the Mac n Cheese
Ingredients
* ¼ cup butter
* ¼ cup AP flour
* 1 can evaporated milk
* 1 ½ cup milk
* 1 cup cream
* ½ teaspoon mustard powder
* ½ teaspoon cayenne
* ½ teaspoon chicken bouillon powder
* 1 teaspoon onion powder
* ¾ teaspoon granulated garlic
* ½ teaspoon black pepper
* ½ teaspoon salt
* 1 ½ cup shredded sharp cheddar cheese
* ½ cup processed american cheese product, cubed
* 1 cup shredded monterey jack cheese
* ¾ cup gruyere cheese
* 3 cups medium macaroni, cooked and drained
1) Add butter and AP flour to a large pan.
2) Add in the evaporated milk, followed by the milk and cream.
3) Toss in your spices.
4) Add half of the cheese to the sauce.
5) Pour in the macaroni. Mix well. Top with cheddar.
6) Oil a casserole dish. Pour in the mac mixture. Bake at 375 for 20 minutes.

That is a massive recipe. My ‘recipe’ as a kid was shells cooked to package directions, a bit of milk, melted cheeze whiz, a hint of salt and pepper, a small squirt of hot sauce, and once ready add some LeSeur baby peas. Nowadays I would use Fibergourmet Rotini, but I stand by the rest!

how about a Myth Munchers for perfecting fried rice? leftover vs fresh rice, washed vs unwashed rice. mix egg with rice before cooking vs cooking egg separately, add protein (chicken, ham, sausage, etc) vs no protein. plus more tests idk? Then Uncle Roger can review it! pls and thank you
And before you guys say anything, I know you’re supposed to used washed leftover rice. I couldn’t think of any other side by side tests you could do

I love the stark differences in the groups here. Nicole and Vi are calmly talking to each other about how well they get along and talking about the food. Trevor and Josh, literally just screaming.
Josh is like an adult golden retriever, absolutely batshit but comfortable in his never ending bouncy-ball energy. Trevor is his pup, desperately trying to keep up but also not sure if anything Josh does is actually a good idea.

I can't believe they didn't test baked versus cooked on the stovetop! That seems like myth #1 to bust as far as I'm concerned. I always do mine on the stovetop and have wondered if baking made that much of a difference.
I’m a creamy mac fan so stovetop is my favorite. I don’t mind when it’s topped with extra cheese and baked but I still prefer the creamy middle over the crunchy edges. And you can scrape any breadcrumb or corn flake toppings right off the plate.
But I am wondering why they didn’t have stovetop vs baked vs topping as their final comparison.
@@mirandacoulter888 I think it should have been the first test to be honest. The cooking method sets the baseline for everything else, and they even said at one point had they done stovetop they think the other way would have been better. It's probably the bigger question of everything they tested and if they want watch time it makes sense, but scientifically the one that has the biggest impact on the results should be tested first. I also think the cheese type myth was kind of dumb. Like yeah, different cheeses are going to have an impact, but get creative with it. Three variations of your standard yellow cheddar? Come on, that's not interesting. I want to know if a 5 cheese Mac is actually better than a single cheese, or what if you have really fancy cheese? The last Mac I made had an aged 24 month cheddar, a smoked Gouda, and three other cheese, and it was damn good. But would it have been just as good with a single block of regular cheddar? Who knows, and now we'll never know.
It's absolutely night and day. Stovetop is a quick and easy, but lesser substitute for when you don't have the time, energy, or knowledge to do it correctly.
@IntrepidRacer13 Baked mac is my favourite, specifically to mix breadcrumbs and parmesan on top. You and I go the same route for fancy cheeses too, but I'm pretty sure Josh stays away, for crowd-pleasing purposes.

I'd legitimately love to see a Caesar Salad episode. You guys could easily get into the anchovies.
Fun fact the Ceaser salad was created by Ceasar Cardini, his recipe did not have anchovies in it, however his brother Alex Cardini made a salad called the aviator which did have anchovies in it

Anchovies: dry salted v tinned in oil v boquerones. (I'll eat them all as I haven't yet met an anchovy I don't like!)

Yes, Nicole rocks. I feel like she's my friend even though we don't actually know each other. The whole Myth Munchers crew is great though and I think they have good chemistry together - they act like they actually enjoy their jobs and being around each other.

Fun fact for all my lactose intolerant friends out there: Costco's webber's lactaid end's up being about 3times cheaper than lactaid's. There's 120 per bottle and they have over twice as much lactaze enzymes than the lactaid's extra strength per pill. Lactaid's 3500 units VS webber's 9000.

Thank you for stopping the music when Trevor and Josh were hyperventilating on their macaroni to cool it. It was comedic gold.
Very surprised they didn't do a breadcrumb comparison (none, Corn Flakes, Boxed, for instance). It's quintessentially Baked M&C.
The only time I've had breadcrumbs on mac & cheese was when it was a pre-made microwave ready meal! I just see it as an attempt to seem more fancy than it really is.

I love the Myth Munchers episodes so much! It's so much fun seeing everyone play off each other, and it's really interesting to hear what combinations make for the best dish, especially when the results are unexpected
Made this tonight. Added shredded buffalo chicken to the casserole dish. This is one of if not the best Mac and cheese recipes we have ever made. Did a mix of off the block cheddar cut with American and topped with Gruyère. Super 🔥. The evaporated milk really makes this dish :)! Keep up the great work ya’ll!

I laughed so hard, solely because of the following conversation... probably 6 months ago my sister and I made ham and bean soup to bring to our dad...my sister was just going to put the whole soup pot in the car with just the lid on it....as we were in a rush, I panicked, trying to convey that it'd be a better idea to just put it all into a big tupperware container...but for some reason, all that came out of my mouth was, "You can't just bring LOOSE SOUP in the car!!?" We both laughed hysterically and "loose soup" has since become a family joke. 😂

The only time I had evaporated milk, I got the sickest I've ever been before. I thought I was only mildly lactose intolerant, but boy was I wrong. I used it in a soup, and ate it for a whole week, because I thought I was sick from food poisoning, but I had just consumed way too much dairy. It was miserable.

Man, I feel like I have been making mac and cheese wrong my whole life. I just follow the box, and then add a little spices and sometimes tuna. I have never thought/heard of baking your mac and cheese.
Baked Mac & Cheese is great....but I don't care what anyone says, boxed Mac & Cheese is delicious. I too add stuff to it, salt, cayenne pepper, usually a meat of some kind...ground beef is my favorite. Canned Tuna is great too.

I've love to see you guys do one of these where you actually try every permutation to find the ultimate combination. It would make something like 48 different mac and cheeses though lol pretty tough to really judge with that number.

I've noticed that Trevor is a completely different person when he's paired up with Josh during one the segments lol. He's trying a bit too hard to match Josh's energy. But it's totally different if he's paired with Nicole or Vi.
I don’t think he’s trying too hard I think he’s just matching the energy of the other person which makes him a very dynamic member of the team.

My aunt actually uses chicken stock, pressure cooker, of course elbow, I believe a little bit of whole milk and surprisingly like 4 or 5 different cheeses and its the best damn mac I've ever had.
So many more possibilities for this series! Like, for example, pesto...there is SO much debate about the importance of the order and heating and when to puree with what ingredients present and whether you can freeze with the parm or even garlic already in it, etc. So many variables. I'd love for you to test it out!
And if you want more suggestions from us, just let us know! So many options!! Love this series!

I like the shell pasta mostly b/c I usually add peas or sauteed veggies to my mac & cheese and it's fun to get the peas in the shells. Also we're a fan of goat cheese and cheddar in our house. Now I'm craving the mac & cheese!
I've always loved the small shells, ever since I was very young, and my cheese combination is sharp Cheddar + Swiss + Gouda. And -- get ready -- when I have some on hand, the dreaded Limburger makes a wonderful addition. Plus, I use half-and-half, not milk. (P.S. Don't listen to those folks on Food Network. Gouda is not pronounced "goooo-duh"; we Dutch speakers know it is "khow-duh".)

As a Mac and cheese fan, there is too much sad Mac out there that's just poorly cooked noodles and watery cheese sauce. I'm always disappointed by that sad stuff, especially when a restaurant changes a premium for it.

The rue for the cheese is cool and all, but have you tried sodium citrate? You can REALLY go cheese forward with the sodium citrate. Makes sure them cheese proteins don't get grainy under heat! Makes amazing cheese sauces for everything cheese sauce - Mac and cheese, queso, etc etc etc. DO IT!
That's what the American cheese was for. Sodium citrate is an emulsifier that they add to processed cheeses to stabilize them.
Definitely! I've made it exclusively that way for the last 7-8 years. Now I'm curious to try it with evaporated milk, though...

I'm a sucker for using Cavatappi in my mac and cheese as of late I must say lol However, I will be trying the evaporated milk to elevate them in the near future. I love this series ✨
What I do is cook my pasta in milk, so then I get Evaporated milk using regular milk, since it evaporates while cooking, and gets thickened with starch from pasta, then just add cheese and you good

I ran out of milk the other day, used evaporated milk instead. It's a short cut. But it did make it creamier, easier than boiling in milk.

Okay, that is some severely undercooked pasta lol I've never heard of cutting the time nearly in half. For me, if it's about 11-12 minutes on the box, I'll cook the pasta 9ish minutes, toss with the cheese sauce, and bake
I do the same. Some boxes of pasta have instructions very simular right on the box.
That's not severely undercooked, that's actual al dente. My pasta packages say 12 minutes. I cook them 5-6 and they're al dente, which is just past the point when the center is no longer crunchy. Americans overcook pasta.
Edit to add: 5-6 minutes on 12 min. pasta is al dente for non-baked pasta recipes. If you bake you probably have to go less.
@@samtremblaybelzile Cultural cooking preferences are always interesting. Products in Scandinavia always have Danish, Swedish and Norwegian instructions and they will very often be different. My memory could be wrong, but I think the Swedes generally overcook things.
@@JohnAndJohner I'm sure that plays into it. I used to reduce the cooking time by a few minutes from what the box said in Canada, but since I moved to the US, I've had to halve it. Barilla pasta seems to be made differently in the US also. I bought a few packs of it soon after moving and I was disappointed because I wasn't able to get it to keep any firmness.

Also I don't usually make a sauce but I've been considering doing so just to elevate my macaroni a bit more. I do know that some people make their noods in a broth (I would use veggie cause I don't eat meat) and it turns out really flavorful.

I've always done my Mac & Cheese: Whole Milk Rue > Mustard Powder > 3/4ths Cheddar > 1/4 Pecorino
Usually don't bake it though, because I love it creamy from the pot.

Yo.... Why are they not subbing evaporated milk w/ 1/2 condensed milk and also adding more differences to the cheese line up? I have the BEST recipe that I got from my neices husband that BLOWS away anyother!!!
Every time I've seen people use evaporated milk it wasn't a direct substitute where you make a roux, instead you cook the noodles in a shallow pan with just enough water and then dump the evaporated milk directly on the noodles after the water has cooked down, using the milk and starch from the noodles as the thickener.
People use evaporated milk in cheese sauces like queso dips because it slows the sauce from becoming coagulated (it stays creamier longer)
Them blowing on every bite before eating it is definitely my favorite part.

Correction on the undercooked vs package. If you’re baking it you gotta go undercooked. But with just a sauce based Mac I respect the mush factor
I'm disappointed that you guys didn't try breadcrumbs vs no breadcrumbs. I think that cheesy, crunchy breadcrumbs on mac and cheese is amazing, but some people don't like it. Would have been a fun test.

I'm surprised you didn't throw in an extra oven vs. Slow cooker. I've always made my homemade Mac and cheese in a crock pot. Those 6 hours really make the difference lol

Ok two differences they didn’t try, is I cook my noodles in sodium free chicken broth, and I use heavy whipping cream instead of whole or evaporated milk
Josh needs to work on talking with his mouth full.. either dont take as big a bite, or finish chewing before talking... i dont know why, but it makes these hard to watch.. i end up skipping his stuff.
