Dough Ingredients:
* 2 1/3 cups AP flour
* 1 tsp sugar
* 1 ½ teaspoon active dry yeast
* 2 tsp kosher salt
* 1 tbsp olive oil
* 1 cup + 2 tablespoons warm water
Sauce Ingredients:
* 1 28 oz can of crushed tomato
* 1 heaping tablespoon of Tony Chachere's
* Cheese and Toppings:
* 1 heaping cup of hand shredded mozzarella
* 1/4 cup parmesan cheese
* a small handful of lightly torn basil leaves
1) Warm water to 110 degrees. add in the yeast and allow to bloom for 5-10 minutes.
2) Combine flour, sugar, salt into a large bowl of a stand mixer.
3) Add the olive oil to the bloomed yeast/water mixture, and then to the bowl of the stand mixer.
4) Mix for 8 minutes in a stand mixer.
5) Oil a bowl and add the dough and proof in the fridge for 20 hours, removing from the fridge 4 hours prior so the dough comes to room temperature.
6) Punch down the dough and fit to a pizza pan.
7) Add pizza sauce and cheese.
8) Bake on a preheated pizza stone for about 10 minutes at 500 degrees.
9) Remove and top with parmesan cheese and basil. - Розваги

I don't understand. Is it like a religious requirement? Are they not aloud to eat regular pizza from some reason?
@@itisnotsosimple If you're keeping Passover, you can't eat leavened bread during the duration of the holiday. So, a normal pizza crust is out, hence the matzah pizza.
Idk. I really like thinner crusts. I'd like to try a matzah pizza.
This is going to be my first Pesach coming up in 2022. Would frying the matzah in a bit of oil before topping and broiling help it at all?
I just love Nicole's contribution every episode. I also think it's really cool to see how normalized they made Passover observance.
It took me an embarrassing amount of time to realize it was the leaven bread she couldn't eat!
Nicole is so powerful that she can tell which pizza is the best just by holding her hand over it

I’m glad that she stuck to her beliefs. So many people say they believe in this religion or that religion but they only follow the parts that they like. They can always make her the winning pizza when passover ends.

As someone who has worked in food service their entire life, and has worked under only chefs that were named Josh, they are ALL like this and it’s great
Trevor loaded that pizza with fresh mozzarella. You can’t put that much on, there’s too much moisture. Knew it was gonna come out sopping wet before it even went into the oven.
It's also best with water-packed bocconcini (small mozzarella balls). Fresh mozzarella is hands down the best cheese for pizza, and I've never had it get soggy like that.
I feel like it needed a patting down first to remove some of the moisture
In defense of fresh mozzarella: I find I enjoy it most on a more dense/ crispy dough. On a thick fluffy dough like the one you ended up with, the dollops of cheese get lost in the dough and sauce... and the sauce (if it’s a runny sauce) will make the dough wet because it’s not contained properly by the cheese and crispier dough. Just saying... I don’t think fresh mozzarella had a chance under those conditions. 😅

Versatiling is valid.
It depends on the topping, quite frankly. For example, if you're using spinach or steak, or feta cheese, that needs to go on underneath, as it burns very easily. Other toppings should go on top of the pizza, and then be sprinkled with a small amount of extra cheese on top.
Remember kids, cheese spreads a lot when it melts. Your typical Dominos medium pizza only has 5 oz of cheese on it. Don't over-cheese. ;)

I know. Ive always thought I was a heterosexual male but after seeing that thumbnail I'm second guessing myself.. Oh Josh why must you be such a god among us mortals
When I make pizza I do like 5 to 7 days of fermentation in the fridge. You get less browning because more of the sugars have been eaten up by the yeast, but the sour flavor definitely makes up for it in my opinion. Also, I just slice up the block cheese and artfully place it around the pizza the way you would with fresh, it's less work than shredding and produces a good result.
Vi brings such a good energy to every freakin video. The litte basil dance is my new favourite thing
In regards to the cooking surface, I've found myself really enjoying the cast iron. I'm not sure if y'all cooked it this way, but I do it the way Adam Raguesa does in his cast iron pizza video. He puts a bit of olive oil, salt, pepper, dried oregano and red pepper flakes in the bottom of the pan and spreads it around. Then, he spreads the dough directly onto the pan that way and heats it up on the stovetop to pre-cook the bottom and get the pan hot. Once the bottom has crisped to your liking, you spread on sauce, cheese and your toppings and then put it under the broiler to finish. It's really great and worth trying if you don't have a pizza stone.
I actually advise people preheat an oiled cast iron to get it fairly warm/hot while preheating the oven. Then plop your dough into the cast iron, put on your toppings and immediately transfer to help cook the bottom all the way.
Definitely one of the best ways to do it at home.
And I'd argue as good as a pizza stone because you actually have to preheat the pizza stone or it doesn't work XD

Overnight proofing and fermenting does add a depth of flavor to the dough, and gives more texture. I did a three day ferment once and it came out very sourdough like and quite good

I’ve heard of using the pizza stone as a sort of salamander having your pizza on a pan or another stone in the center of the oven with a rack close above it where you put the stone that has been preheated in the oven probably 2-3 inches away from your pizza surface and it’s supposed to help develop a better surface

When cooking with a pizza stone you can actually prep it on a non stick pan and slide it off onto the stone. I’ve seen my dad make pizza on multiple occasions, he cooks it on the stone and always preps it on a nonstick pan. Love the show :)
I am really enjoying this new series. It's like real practical advice you can use in your day to day life.

Yall are killing it with these myths. I can't wait till you get to the BBQ ones. So many bbq myths and rules. Like with brisket, do you wrap in paper, let it sit in a cooler, wet or dry brine? Baste while cooking or not?? How much smoking is too much. Apple or cherry wood? Charcoal vs gas(we all know but it would be fun to watch). Soon many bbq myths, so much content. You could get multiple episodes.

More people have a cast iron pan than a pizza stone, and comparing the two was supposed to be the point of testing them against each other.
Yes! This drove me crazy! Preheat the pan then quickly build it in the pan, this is how I've made the best pizzas! And the same with the stone, take it out and build it on it quickly, its literally just 45 seconds max! Also use cornmeal under the pizza!

I think they should do an episode of “right now” pizza. So when I want pizza I can make it from start to finish in like 30 min.
Tortilla pizza: Oven at 425°F
Foil on a sheet pan. Flour tortilla, sauce, cheese, toppings. Bake for 10min.
Not exact, but it'll scratch the itch, especially if you like thin crust.
