    Here we're taste testing the French Style Saison brewed up on the two vessel RIMS brewery with kettles by Spike Brewing, controller by Erik, and everything else figured out (slowly) by myself! Overall, I think this beer rocked it, with lots of fruity notes, saison-style flavor and malt balance, and just enough hops to make it work. For a home brew, I think it is really good, and even if it were a commercial brew, I'd buy it. And that's pretty much my take on it! Delicious, floral, fruity, a little bit funky, and the fermentation process couldn't have been easier since we didn't even need a controller/box to make it happen.

    I usually find "tasting" videos boring and pointless, but you are such a funny character Joe, yours (and Craig's) are enjoyable to watch.

    I guess the big hot topic with saisons is the pitching rate. With belgians i usually inder-pitch and start fermentation ca 15 deg centigrade, let it warm up as the fermentation goes on. With the french saison we are more after phenolic aromas than esthers, but id still pitch it pretty low, so the metabollic by-products can build up. Obviously, if you bottle condition, they need to be fizzy... 2.5-3 volumes is pretty reasonable.

    Excellent looking beer there Joe !I brewed a Belgian Saison around the 4th of July it didn't dry out as much as I had hoped for, , , probably the yeast I used (Belle Saison dry yeast) but was still very tasty. Giving the temps this summer and that I'm limited to mail order more or less it was doubtfu the 3711 I wanted to use would have survived the trip to Tenn. I would brew it again though. Cheers !

      Nice! Yeah, 3711 is a monster... Driest finishing gravities I have ever had. Ever.

    I brew a metric ton of saison. I love a saison with mostly pilsner, a hint of wheat and sometimes some honey malt.3711 is a monster fermenter. Simply amazing how fast and dry it can get a beer. EKG is not really an aproprate hop. If you want a dry spiced saison, I would go noble hops (sazz and/or hallertau) or for a nice twist I enjoy a nice tropical New Zealand hop like Wakatu or Motueka.

      Try it with some carafa 3 in it and a spicy hop like aramis or challenger.

      For sure, one note I had for future recipes was to use a more accurate hop. I'm still relatively new to making saisons, and am actually still developing a taste for them. Thanks for the input, I will definitely have to give your notes a try in my next batch!

    here's my French rye saison recipe......named Ryanne
    est og 1055 est fg 1007 23 ibu 6 srm. 3.8 gal mash 148f 75min sparge 5.3 gal 170f.
    grains
    54.2% Pilsner (weyermann)
    31.3% Rye Malt (briess)
    6.3% Vienna Malt (weyermann)
    4.2% Honey Malt (gambrinus)
    4.2% Golden Naked Oats (simpson)
    Hops/spices
    .75oz Mt. Rainier (7% alpha) 90min
    .5oz Paradise Seed (grains of paradise) 10min
    1.5oz Liberty (4.3 alpha) 5min
    1oz Sweet Orange Peel 5min
    Yeast
    1-2 pkg Wyeast 3711
    ferment 3 weeks 68-70f

    Another fantastic beer, how did you end up fermenting this? Did you let it free rise?

      In the fermentation chamber, a little warmer than usual. The 3711 did the work for me! :-)

    Great video!! I like the beginning. Question Joe how long did your take to ferment out completely? I have one going, it's been going for 4wks and I haven't hit FG yet.

    May I request you do a video on kegging? Im an extract brewer, but Im trying to move on to begging because Im already sick of bottling. Also, maybe explaining how to all grain brew?

    what carbonation vol did you use?

      This one was a little higher than I usually like it, so probably around 2.5.
