I am obsessed with these COTTAGE CHEESE COOKIES. 🍪 They are high in protein, gooey and so easy to make! I've made 5 batches in the past two weeks and we've all loved them... including Isaac (who isn't a fan of cottage cheese)! 🙌 Here's the recipe: 1 cup large curd cottage cheese (I used @goodculture) ¼ cup pure maple syrup 1 tsp vanilla 1 cup almond flour 2 Tablespoons melted coconut oil ½ cup vanilla protein powder ½ cup chocolate chips + more for topping 1️⃣ Preheat oven to 350°F and line a baking sheet with parchment paper. 2️⃣ In a blender, add the cottage cheese, maple syrup and vanilla. Blend on high until smooth. 3️⃣ In a mixing bowl combine almond flour and protein powder. Add the coconut oil and cottage cheese mixture. 4️⃣ Stir until combined. Fold in the chocolate chips. 5️⃣ Scoop dough onto a prepared baking sheet using a medium cookie scoop and use your hands to flatten the cookies just a bit so they’re in a cookie shape. You can also roll the cookie dough into a ball and then use your hand to flatter for a more uniform shape. It will depend on the ingredients you use. If you use protein powder like she did, its probably that much, but unless you eat them all, smaller amount of protein and calories per serving
I made these and they were flat like paper. I tried again made sure cottage cheese was drained well and I added 1/2 all purpose baking flour. They were not think like hers.
I recently added green pepper and cherry to some low sugar muffins! They're great! Except that I mixed up the baking soda and baking powder quantities which, if anyone else has done, creates a pretty nasty flavour. I had to at LEAST double the recipe to cut the bitterness...but alas I was out of flour... ...so I ground up corn flakes and and oats; that did the trick! I have a sneaking suspicious cooking is more accessible than it seems. Anyway I used coconut oil instead of butter and the texture and taste is lovely...soft, crumbly and the cherry and green pepper is so unique and beautiful; a good snack! 😊😊😊
I made these today & for some reason they spread to a flat pancake. I'm trying to figure out what I did wrong. When I blended the Cottage Cheese, Maple Syrup & Vanilla is was super thin. I kept the rest of the batter just in case I wanted the cookie dough. I will try again, if I can figure out what happened.
