- Peek over my shoulder as I meal prep during a normal week when I only have a little bit of free time. The 5 items I meal prepped made my week run so much more smoothly and allowed me to eat healthy all throughout the week...even with two little kiddos!

► How to Cook Spaghetti Squash: www.loveandlemons.com/how-to-...
► How to Roast Sweet Potatoes: I wash the outsides of the sweet potatoes and then cut them in half before placing them cut-side down on a silicone baking mat. Then roast them at 400F alongside the spaghetti squash until a knife can easily pierce them...about 30-40 minutes.
► Peanut Butter Protein Ball Recipe:
- 2 cups quick oats
- 1 1/2 scoops Women's Best Vegan Chocolate Protein Powder
- 1/2 cup honey or agave
- 1 cup natural peanut butter
(optional: 1/3 cup ground flaxseed)
► My Chocolate Oatmeal "Packet" Recipe:
- 1/2 cup quick oats
- 1 tablespoon ground flaxseed
- 1 tablespoon cocoa powder
- 1 teaspoon chia seeds
- pinch sea salt
- dash cinnamon
I add 1 1/4 cup liquid and 1/2 of a mashed banana to my packet. Stir everything together well and cook over medium heat until thick.
► Bean "Smash" Recipe:
Drain and rinse 1 can of chickpeas or white beans. Mash them a little bit before seasoning with salt and stirring in a couple large spoonfuls of your favorite hummus.
► Mexican Spaghetti Squash Casserole:
I used Cookie and Kate's Enchilada Sauce recipe. In a large mixing bowl, stir together your meal prepped squash, 3/4ths of the enchilada sauce, and 2 cans of drained and rinsed black beans. Pour the mixture into an 8x8 baking dish and top with the remaining enchilada sauce and about 1/2-1 cup of vegan cheddar cheese. Bake at 350F for 15-20 minutes or until heated through and the cheese is melted.

Honey isn't Vegan. Unless they have a Vegan version now. All are great ideas. I should do a little meal prep. I probably would do better and eat better. Yummy.
I'm so glad you commented! I actually didn't have vegan in the title, but my business partner changed it to vegan without knowing I used honey in the protein balls. The title is fixed now! Just use agave to make the protein balls fully vegan :)

Didn’t want to use honey up so I pulsed dates that I needed to use up instead and added some chia seeds also….thanks for the recipe…
I use my instant pot, I have a 8 qrt and a 12 qrt and cook squashes and potatoes quickly in them….saves heating the kitchen up…just a thought.

A good tip for cutting the spaghetti squash is to poke some holes and microwave for about 2 minutes maybe turn and heat a bit more if needed. It gets tender enough to cut open without hurting yourself.

How is this vegan if you use honey?
I called this video Plant based because I know a lot of vegans who don’t eat honey. But I also know some who do! You can use whatever liquid sweetener you prefer☺️
