  • Asam pedas or Asam padeh (in Bahasa Indonesia) means sour spicy, is a classic favourite dish among Malaysians.
    Tamarind paste based asam pedas is more popular in the southern part of Malaysia.
    Asam pedas or asam padeh uses tamarind and dried chilli as its based with fresh herbs of vietnamese mints (daun kesum), lemongrass and ginger torch flower to give that aromatic flavourful, hot and sourish taste to the dish.
    Fish is widely used in asam pedas cooking, with addition of tomatoes and lady's fingers.
    However, asam pedas chicken and beef (with lots of tendons) are getting popular among asam pedas lover!

    Asam Pedas recipe
    Ingredients for Asam Pedas
    300g skate wings
    handful of vietnamese mint
    1 ginger torch flower
    3 tablespoons tamarind concentrate
    1 tablespoon belacan (shrimp paste in powder form)
    2 teaspoon salt
    2 teaspoon sugar
    1 to 1.5 cup water (or more)
    1/2 cup oil
    10 lady's fingers
    Asam pedas paste
    10 dried chillies - wash and soak
    4 shallots
    1 inch fresh turmeric
    3/4 cup cut pineapples (I used frozen pineapples)

    Bahan-Bahan untuk Asam Pedas
    300g ikan pari
    se genggam daun kesum
    1 batang bunga kantan
    3 sudu besar asam jawa
    1 sudu besar serbuk belacan
    2 sudu kecil garam
    2 sudu kecil gula
    1 to 1.5 cawan air
    1/2 cawan minyak masak
    10 biji kacang bendi
    Pes Asam pedas | Bumbu asam padeh
    10 biji cili kering - di basuh dan di rendam
    4 biji bawang merah
    1 inci kunyit hidup
    3/4 cawan nenas (saya pakai nenas frozen)
