INGREDIENTS:
2 kg horse or beef roast
For the pickle marinade:
400ml of water
400 ml destilled vinegar
400 ml white balsamic vinegar
3-4 bay leaves
3 cloves
10 juniper berries
10 mustard seeds
10 peppercorns
For sauce:
3 carrots
100 grams of celery
100 g parsley root
1 large onion
2-3 cloves of garlic
1 small leek
2-3 tbsp oil
1.2 tbsp tomato paste
400 ml rosin
400 l veal stock
4 bay leaves
2 sprigs each of parsley, thyme and rosemary
salt and pepper
1 handful of raisins
4cl rum
3-4 Aachen prints

I like your classic German Sauerbraten. I don't think we have anything like this here. I liked the marinade for the Beef.
All those veggies and herbs cooked with the meat. I bet it all tasted amazing at the end. Liquidising the sauce gave a nice smooth finish to your dish.

I guess the twist is the mixture of sweet (sauce) and sour (meat). I guess the closest dish from other countries might be shashlik. It is also marinated in vinegar. Only not that long and with a pork or lamb - lol. Have a great weekend

You can easily copy that, Sef. As Markus said, the idea is a sweet and sour combination. That is reasonable if you think of the past without a fridge... use vinegar for conservation and as a softening agent. I personally like to use a piece called Semerolle in German, which I think is translated as "eye of round" or "false tenderloin".
I would love to make this, but being in Canada I'm not familiar with the ingredient "400ml rosin"? It almost looks like molasses? Could you please explain this ingredient to me? Maybe give me some substitute ideas so I can better understand what this ingredient is? Thanks.
We add raisins and a syrup that is made of sweet beets. I guess molasses might work as well here. This is one of the ingredients that is not available here in Germany. Basically the idea of this dish is to have sour flavored meat with a sweet sauce.
