      Vinegar will preserve it

      Meat uncovered in the fridge is good for 2 weeks and more. Steak Houses have the meat in coolers for 6 weeks, more tender. Fresh meat is tough.

      yes....he used 2/3 red wine vinegar to 1/3 red wine
