To anyone getting bothered, vegan pho is a legit thing. Vietnam is predominantly Buddhist so monks, religious people, and people who practice during certain times of the month don't eat meat. Did you really think we only limit ourselves to rice and tofu? Vietnamese people don't play that way.

There's like no effort into it as much as white people believe. 40% of India is vegetarian and there are tons of food, like there are thousands of vegetables, fruits and grains s to choose from. The hardest thing to follow would be a keto diet imo. Not a vegan or a vegetarian but I live in a country where vegetarian food is a vital part of our culture and cuisine, along with meats.
Tried pho for the 1st time a few weeks ago and knew my life/diet was changed forever. The first time my mouth's started watering from watching a video too. that's because u can cook it for 1 hour and it'll taste okay, but the longer you cook, the better it tastes because the flavor gets more ingrained? into the broth, so the taste is better. sorry for my bad english :( but yea, if you have the time, just leave it on simmer for as long as possible
Mimi that’s why fastfood exists. You need to put time and effort in making pho. Almost every pho restaurants here in Vietnam cooks their broth overnight
yeah. but here's a trick: use the pressure cooker. in my family sometimes we make pho for breakfast and by preparing everything from yesterday night it's not that much work for a bowl of pho. we cook bones with the pressure cooker for probably 1 hour so i think it's even faster with vegan pho then you just cook the tofu seperately, but that's not a big deal considering you save so much time
This is great! My mom makes the best beef pho, but i know people who religiously doesn't eat meat and ive been wanting to find a vegan pho recipe so that i am able to serve them something to eat lol

I cook asian food quite often and i followed the recipe exactly, but after 8 hours i was left with a slightly mushroom/aromatic flavoured water which was SO bland, even after seasoning and adding the fresh ingredients on top. We only managed a few mouthfulls each but ended up chucking it and having beans on toast instead 👍
I saw somewhere that you should add spices only last 1-2 hours of however long you simmering your broth, otherwise wise it gets too “homogeneous”. Also I saw that veggie broth doesn’t need 8 hours, but 4 is enough.

In Vietnam it’s not that uncommon to serve vegan pho because of heavy Buddhist background there.
You should also roast the spices.

Maikel Fist there is more flavors in the dried version. My mom always use dried herbs and mushroom to make her soups.
