- In Mangalore, any special occasion or a festival is not complete without Sanna, Mangalorean special idli's. Sannas are Idli's made using toddy, which is used for fermenting the rice and dal batter. Toddy is a beverage obtained from the coconut tree.

Sannas have a very soft and spongy texture. It just melts in the mouth. Most often served with pork bafath or any curries.
Sannas are also made with yeast. Add 2 tsp of yeast in lukewarm water and leave it for about 5-10 minutes. Add it to the batter and leave it for fermenting.

What is meant by toddy
Nice presentation .. Good to know yeast can be used instead of Toddy, which is difficult to get
No Toddy? No worries. When adding sugar, use yeast instead. Hold the salt until the batter is fermented.

Toddy is a beverage that is freshly extracted from different species of palm trees. In Mangalore toddy is got mainly from coconut palms. This tastes sweet when freshly taken and later gets sour as it gets fermented. Freshly extracted toddy is preferred for the preparation of sannas.

The substitute for toddy is yeast or you can also collect coconut Water add sugar to it , keep it for 2 days it's turns to toddy .
