Absolutely amazing sauce. Great recipe. I have made it several times now and can't live without it. It just go so well with so many dishes. Together with pickled jalapenos this is my favourite use of chillies from the garden.

Just made it but I didn't notice the recipe called for 20 habaneros. I only used 10, but omg it was soooo hot lol. The sauce is so good I used it for chicken wings, my boyfriend favorite is the mango habanero he loved the sauce. I froze the rest of the sauce and now I'm going to make a peach and pineapple version. Great recipe thanks for the video!
Glad to know that you enjoyed the recipe I guess 20 would have been too much for you. I personally love it coz if the nix of flavors it's nit just straight up hot peppers only.

Just made this and its beautiful! I used much less vinegar though (1/2 cup) and more lemon (2) I'm not a fan of vinegar and I don't need it to last months and it didn't lol!

Have you ever used pressure canning to make the sauce shelf-stable? I do this routinely, I also use water-bath canning for high acidity preparations. I have made about 20 different habanero salsas and yours ranks high. I do not like all that vinegar but that was an easy mod - replacing the acid with pressure canning. Nice video and great sauce.
No I have not tried pressure canning coz I usually do not make so.much sauce for my personal use but it's a great tip thanks for sharing.
Would you mind sending me some instructions on pressure canning this or if it can just be water bathed? Which would be the best and safest method to make it shelf stable? I need to know head space and the processing time that I would need to use. I would really appreciate your help with this. Thank you.
@@MrBadger236 Iam not an expert but you can learn about everything there is to know about canning and preserving in general from "The All New Ball Book of Canning and Preserving" available on Amazon and other places. I leave about one inch (25mm) of head space filling to just about the shoulder of the jar and process at 15psi (1 BAR) for 45 minutes. I highly recommend the Ball Canning book the few dollars it costs is well worth it.

Can this be canned so that it will be shelf safe? If so, would you please let me know how to can this. I would like to make a large batch and store some for later. I just need to know like head space and can I water bath or would I need to pressure can and for how long would I need to process it. Thank you so much for sharing. I plan to make this.
I have never canned this but reading some comments here there some experts who suggested it can be done.
any problem with not cooking the mango and the lemon juice? Also, what about apple cider vinegar? I never use white distilled.
This is mango habanero, thats why I used mango you can substitute with what ever you want, just use the technique and ofcourse cider has different flavour than white distilled vinegar

can someone who made this salsa let me know if its very acidic/vinegary ?
Its best to go through the comments alot have done it , I know the acidity level seem high but its not overpowering and also you can always reduce it

Why did you peel them AFTER roasting them? Is there a reason for that?
The garlic skin doesn't really blend well , it just breaks down into small particles
@@aromaofzanzibar yeah obviously you don't want to blend it with the skins on. I'm asking why you skinned it after roasting, instead of before? Is there a reason you would roast it with the skins on?
Oh ok when you roast with skin you develop smoky flavors and aromas

No, I think the mangoes are sweet enough but you can always add some if you like
What's the spice level on that recipe? Not a fan of heat over taste
it's perfect for me but you can always replacement half the quantity with other papers that are less intense
