    You’ve inspired me to make bagels! I did so years ago, and it’s time to bring it back! NOTE: after you form the rolled ball, try letting the balls rest for 7 to 10 minutes before forming the holes. A bit of relaxation does wonders. I’m 80, but never too old to enjoy (and share) food tips! I very much enjoy your videos-especially the gardening!

      Yes, when I form my bagels, once done I go over them a second time. You really want them too look way too big. Like twice the size at least of a hole than you want in the final product.
      Also, after I do the final shape I cover with plastic and let them sit overnight in the fridge. This breaks up your time and lets the bread develop more flavor.

    Made the begal recipe today. Currently cooling on baking sheet. I added 2 bulbs worth of roasted garlic to the mix, then egg washed and added granulated garlic. Going to make cream cheese infused with 2 more bulbs of roasted garlic. On a range of 1-10, on being a garlic lover, I'm a 20. I hope they turn out as good as they sound. LOL 😊❤

      They were good, but next time I'll add the roasted, garlic and some raw. It just wasn't as full a garlic flavor as I hoped it would be.

    Hi Becky, looks amazing! However, this just in: the reason you boil the bagels is not actually for the "chew". Boiling bagels before the baking sets the crust, prevents the dough from expanding too much in the oven, and gives bagels their unique skin. Same goes for pretzels. Just an FYI 😅

      I was going to say the same, and to expand on that, just surprised that her recipe didn’t tell her to put baking soda and molasses in the boiling water. I’ve never seen a recipe that didn’t call for that.

      Correct I've always added baking soda to help the crust brown.. but she didn't seem to have any issues with the crust by skipping this step.

    Congratulations!
    A bagel making tip though because I didn’t see you add it, is once your water is boiling, add a couple of tablespoons of Baking soda (2T) and either 2T honey or brown sugar* (*you can also add barley malt powder or syrup). The baking soda is important. Be careful when you add as the water will boil up. This will impart color, shine, and a chewy texture in the finished bagel. To get this, much like pretzels, you need to change the water to alkaline with the soda. You don’t want to add too much of it, because it can give a metallic taste, but you don’t want to skip it either.

    I have a camp in Maine and the blueberries grow wild all around me. They are so flavorful, much more so than the big cultivated blueberries. Cute story, I was sitting in a lawn chair near a big blueberry bush and the bush started shaking; as I watched a chipmunk came out of the bush with both cheeks bulging with the berries. Totally adorable!!

      Maine blueberries are the best.I'm a northern Maine person but have relatives on the coast. I remember my grandmother making blueberry cake from blueberries we picked. Yummy!

    Actually, Becky, a jalapeño round got put into the dough by accident. That’s why you were short one for the top. You did great! Bagels are real pills sometimes and I’m impressed at how well you did.

    This bagel-palooza was great. Had me drooling! With the blueberry bagel, i think you only put in 3 cups originally. But I need to re-watch the video. I love the way your knowledgeable touch tells you that the dough could use more flour and you adjust accordingly. That's a real baker.

    Just a tip, when you shake your measuring cup to level out the flour, you are compacting the flour therefore using more flour than called for. Just fluff flour, dip cup in and level it off with the back of a butter knife.

      As a precise, meticulous baker, the way she measures with incorrect measurements freak me out. I cringe seeing a liquid measure cup used for dry, etc. But…you do you. Becky is still going to have bagels, bread, cake etc. it’s just going to be heavier. I’ve seen plenty of Nona’s that bake like they cook, a toss of this or that, and it gets food on the table. 😊

      When I don’t weigh baking ingredients, I do the Martha Stewart cheat: fluff my flour container with a whisk, gently scoop, then gently pour into measuring cup, then level.

      One of the few rules I remember from my home ec classes was not compacting flour! (Also wet or dry ingredients needed their own measuring cups.)

    Your uploads are always the top of my list. This may sound odd, but I watch them before bed because they’re so relaxing. I watch them while I work, as well, they somehow make me focus more!     A tip for future I used little squares of parchment to make bagels on then when you boil them just pick up paper and all and put in the water before flipping them paper comes right off Then after boiling place them on a full sheet of parchment to bake This helps with not deflating your dough

    Just find your channel and working my way through your videos and the cooking ones are my favorite! I love making bagels at home and I agree the ones with add ins usually bake up differently. They are notoriously heavier because of the extra moisture and sugar. For blueberry ones, I have done dried blueberries and a swirl of blueberry preserves so I get the color and chew without all the moisture of frozen fruit. I think if you add the cinnamon chips and a few dashes of cinnamon to the plain dough that will give a great result. Happy baking!

People on here are making comments on using cups, well if you have too much flour you can always add more water and visa versa. The yeast can always catch up it will just take a little longer to rise! I love watching you bake!!❤

    Love love blueberry bagels. I got a recipe from a bagel shop several years ago for a cream cheese spread. Ingredient amounts are how much or how little you prefer. They made their spread with softened cream cheese - black walnuts and honey to your own taste. I have occasionally added a touch of maple syrup instead of honey and also vanilla extract. I don't make them too often because we have a problem in my household of not knowing when to stop.

    They look wonderful. There is a lady over in Sweden who watches your channel and she's planning on doing freezer meals like you do. I just watched her unpack a box sent to her from her Amazon wish list of most of the equipment you use. It's so beautiful to see her reaction on the things that she receives from the USA . And she loves what you're doing and you have inspired her to do cooking/baking/homesteading that she has never done before. You're an inspiration to her and of course many others.     The expression in your face while trying each bagel is priceless. I love that you can hear the crunch going into soft when you bit into it. I’ve made bagels 3x. It’s WORK. So I always make in large batches to freeze. I pre-cut all of them and placed a folded piece of freezer paper between each (so the wax side is touching each piece to prevent sticking). Then I wrapped each in freezer paper before placing in ziplock. When I take out of the freezer its easy to unwrap and pop went into toaster oven and lightly toast quickly.
    I appreciate that you did a close up of rolling the smaller portions. And your hole making is MUCH better than two other ways I’ve tried (one was a donut cutter).

    Oh my goodness I was just talking about wanting to make bagels! My Kroger used to make the best jalapeno cheddar bagels and they stopped doing them completely. Most likely I will make them without a big hole no matter what because we use them for sandwiches too! So happy to see this video!

    Becky I just love your videos. I look forward to turning on my computer in hopes you're on my playlist. I've watched my local baker make bagels. He would roll the dough into a rope, wrap the rope around his hand and a form the bagel. The hole was huge but when it bake it was perfect. Although Josh did have a good point about no hole makes it better to for a sandwich.

    I tried bagels a while back and they did not go well. I’m very intimidated by bread products lol so I never tried them again… until today!! I tried the plain recipe you used in this video, topped them with everything bagel seasoning and they came out so amazing!! Will definitely be making more and freezing them!     We used to take our kids to NYC once a year to see a Broadway play, but every time we took a couple of empty suitcases so we could bring back dozens and dozens of bagels from a bagel factory. They froze beautifully! Good memories! Back then all that luggage flew free too!

    I've made Sally's Baking Addiction dozens of times. I make an "everything bagel" mix of chia seeds, pumpkin seeds, sunflower seeds, and fennel. I make my jalapeño bagels with a slice of muenster cheese on the bagel for the last 10 minutes of baking, otherwise the cheese will burn. The SBA recipe works even better if you can mix it up the night before and let it proof in the refrigerator. If you use malt powder instead of honey or another sweetner when you boil your bagels they are crispier. A kitchen scale is your friend. I find the SBA recipe makes about 8, no matter what I put in them. Also, better than parchment paper are silpats. I can see by how your bagels look that they aren't stiff enough - you need more flour. When your mixer is growling, you've got it. It makes for a denser texture. Get out your smoker and get some salmon on there.

    OMG! I just made my first recipe of bagels after watching your video! They were DELICIOUS!!!! I am now planning for other recipes and freezing most of them as hubby and I don't eat large amts of bagels but it is a nice treat 1-2x's a week. Thank you Becky for all of your hard work. I have been so inspired in the kitchen and my cooking skills are improving with every meal after following all of your videos.

    I bought the silicone mat and used it again today! It washes beautifully with just a microfiber cloth and water right on the counter.
    Loving that mixer! I have a 40 y/o Kitchen Aid and I swear anytime I'm adding flour to a recipe. Even with the guard, the flour puffs up. I'm impressed that doesn't happen with this one. I will be sure to use your link if I decide to buy it.
    Love the brand of "bulk" add-ins. Try the lemon chips someday---you won't be sorry.
    Beautiful bagels. I could hear the crunch when you bit into them. Always love to watch your expression as you taste test.

    Becky, oh my goodness......I made the plain and cheese bagels and they were phenomenal! So tasty, good chew, easy to make. I will never buy these again. They taste so great it makes the store bought ones kinda gross. Wow, thank you! I've made many of your recipes and they are so good. I always get compliments.

    To make the hole bigger take the shaped dough around your index and thumb finger in one hand and with the other hand circle it in round mouvement

    Sally’s recipe for bagels is my go to recipe. I make plain, poppyseed, sesame and cinnamon raisin. It’s difficult to get good tasting bagels in France.

    So we made blueberry bagels this morning and they were so good! I accidentally used AP flour instead of bread flour and just used frozen blueberries (all I had on hand) but so worth the work! I will make these again for sure! Thanks as always for recipe ideas Becky!!!

    Can’t wait to try the bagel recipe! Forgot to comment on your video about hand pies. Living in England I know exactly the hot water pastry and make it for my Cornish pasties, or they make it for something called pork pies, using lard. It must be said I’m not a lover of pork pies, as they call for flavoured gelatin in them.
    Also, am a big fan of the television show you’re referring to, in fact the female presenter in U.K. is leaving and not sure who is going to replace her. Can’t wait to see who they will replace her with.

    This is wonderful! I cook for someone that has an uncommon allergy and there are NO bagels he can have from any brand.
