    Ingredients:
    - Beets 150g
    - Onions 150g
    - Chopped kombu 10g
    - Red chili pepper (seeded) 1
    - Vinegar 500ml
    - Sugar 80g
    - Mirin 50ml
    - Salt 8g
    Instructions:
    1. Peel and slice the beets and onions.
    2. In a small pot, combine the vinegar, sugar, mirin, and salt, and heat until the sugar dissolves. Remove from heat and let cool slightly.
    3. Place the beets, onions, chopped kombu, and red chili pepper in a clean jar, then pour the vinegar mixture over them.
    4. Store in the refrigerator for about a week to let the flavors develop.
