Golden sweet potatoes work well too. Ensure the steamer water is enough, so that the cake will cook completely. FYI, after steaming for 40mins, there was still more than 1/3 of the water remain in my steamer. How about yours?

Hi Aimy Luu Huynh, I'm not sure how was your room temperature? Fermentation time depends on room temperature. The cake rises but then collapse: 1. It could be over rise. You may shorten the fermentation time next time. 2. The batter could be not thick enough, it must be very thick and form a soft dough likes shown in the video 2:25 Hope you success next try 😊❤️
All purpose flour is a wheat flour and wheat flour comprise roughly 60% starch and 40% protein. And most gluten free try to replicate this by substituting components of flour which contribute starch and proteins. Now rice flour is essential a starch flour. So by using 100% of rice flour, u are not going to have that cakey texture! You’ll need a protein flour component. You can try gluten free flour instead!

Mine turn out to be almost like rice cake texture. I think is the yeast and I put too much sweet potato with water. Will try again though is nice

Suitable to use taroes as well, just replace purple potatoes with taroes.
You might need to add a bit more sugar as taro is not sweet whereas purple sweet potato is sweet.
