- Pandan Huat Kuih / Huat Kueh also known as Chinese Prosperity Cakes (如意发糕). Soft and fluffy with pandan and coconut milk flavor. No egg, no milk, no bake super easy vegan recipe. Just combine all the ingredients, mix well then steam over high heat, makes 6 Huat Kueh.

Ingredients 材料:
250 g self raising flour 自发面粉
1 tsp baking powder 泡打粉
1/8 tsp salt(optional) 盐(选择性)
90 g caster sugar 细砂糖
100 ml pandan juice 班兰汁
160 g coconut milk 椰浆
20 ml vegetable oil (corn oil) 植物油(玉米油)
Steam over high heat for 20 minutes
大火蒸20分钟

Chia老师你好, I tried the recipe but the cake turned out damp in the centre though steamed for 20mins. I used fresh coconut milk but it looked thick. Could this be the main reason? I used Olive oil instead of corn oil. Will this affect the outcome too?

你好,自發麵粉是已经加了泡打粉的预拌粉,包装没有注明名加了多少。如果不另外加1茶匙泡大粉,發糕还是会微微对你笑。如要笑哈哈😀,请多加1茶匙泡大粉。

我昨晚上做了。。但是失败了。蒸到20分钟的时候它们一点都不发还是湿湿的,所以我又蒸了10分钟,还是一样,再10分钟。。还是不发,只是表面上有一些裂痕 😔 到最后变成kuih 了 😅
可能是泡打粉不新鮮失效了。

我将椰浆换成水但是做出来外型ok可是里面像kuih,一团团一块块的,是什么原因?是不够水还是太多水,我可以拍照给你看吗?我用150ml pandan juice,100g的水因为我算到也是一样换成gm的话也是一样280gm的液体。谢谢
外型ok,里面像kuih,食谱没问题只是蒸得不够熟透而已。建议大火蒸,蒸久一些,蒸锅里的水要够多,蒸气十足。

Why should you add baking powder &baking soda in self rising flour.
I think it’s to make it “over rise” such that it will split at the top. According to Chinese traditions, it’s auspicious to have prosperity cakes splitting at the top.
