What I’ve been doing for years is to pre cook my grains in the IP and then freeze in ziplock or silicone bags, flat. If you give it a shake every now and then in the first couple hours, it doesn’t become a solid block. I do the same for beans too. Amaranth that is super tasty in porridge I freeze on a tray and portion with an ice cream scoop. In the morning I mix and match my grains: a tablespoon of buckwheat, quinoa, sprouted oats or a “ball” of amaranth, whatever I want, I add some beans: usually Spanish pocha or cannellini, lentils or chickpeas, or black beans and add to the instant pot, then I add some frozen banana slices for sweetness, and a little water so it doesn’t stick: 5minutes on low. Everything is already cooked, then I open it shouldn’t be soupy, just right. Inswitch to low sauté and stirring I add some cacao powder, I like intense and bitter. Diluite with some soy milk, add Ceylon cinnamon and cardamom. If you pour very hot on some frozen wild blueberries or berries they will defrost and create a beautiful juice. Top with some nuts and be in heaven!
I make vegan cookies (oatmeal raisin or chocolate chip) using chia "eggs"; the seeds add a nice texture and flavor. Chickpea "eggs" work better, but I'm out of chickpea flour. If you try the latter, know that chickpea flour is very bitter when it's raw, so you won't enjoy eating any leftover batter, but the bitterness disappears during cooking.

I really appreciate these videos a lot. I’ve been trying to take care of my health and eat more fruit, veggies and fiber-related things. I have a lot of food-trauma that I won’t get into too much, but your videos help make me feel safer about trying new things in ways i hadn’t thought of before. I even tried some quinoa mixed with white rice! I didn’t like it very much, and I’ll have to adjust the ratio, but the point is that I tried it, when I probably wouldn’t have before. Steel-cut oats have a much nicer texture than rolled oats ( = less mushy). Use regular steel-cut oats, not quick-cook, and make 4 servings at once to save time. 2. I cook my steel-cut oats with much less water than is recommended -- that also makes them less mushy.
Barley is a nice substitute/addition, too, as it holds up well and has a similar cooking time to steel cut oats. I like adding lentils to round out the nutrition, but that wouldn’t be for everyone.

thawed mashed strawberries mixed with chia overnight is SO good! Sweet and fresh. Dont use mixed berries you get allot of seeds of the blackberries and raspberries. Wild blueberries/blueberries and strawberries are great for it
For the jelly without sugar, you could use some natural pure apple juice in place of the water, or juice the heart of some apples (with the seeds) with a juice extractor. Apples have pectine and it's used to make natural and plant-based gelling agent.

I like the fruit jelly, I would make this. I like to mix oatmeal and quinoa for a creamier texture. One tip, get the ball jar funnel. It makes them so much easier fill and keep everything cleaner.

When you are ready to make the fruit mixture (or anything with chia or flax seeds), grind them right before using them. When you add the whole, you miss out on a lot of the nutritional benefits. At the same time, the longer they have been grounded, the nutritional profile depletes, and you also lose nutritional benefit.

That's a tasty looking porridge and sauce, my man. Thanks for the suggestion. I would just add some pepitas to that mix as I also work out, and I like to have some extra protein to have plenty in the blood stream throughout the day, especially as I'm breaking my fast with the porridge.

The downside of eating quinoa and chia seeds every day is that they're high in phytic acid which prevents your body from absorbing the nutrients you'd otherwise be getting pretty significantly. For that reason it's best to soak the quinoa or chia seeds overnight before cooking which will remove most of the phytic acid content making it much healthier for you.
I'm on a low carb diet, tried quinoa and found it really spiked my blood sugar. So if you are eating carbs it's probably OK, but otherwise avoid. Also while famous for it's protein, it's a protein with a low diaas score. I don't think it merits it's good reputation as a healthy food. I think oats would be better for you that the quinoa. The chia jam on the other hand, brilliant I will certainly try this.

It looks good but I have to say I think I'd still prefer my multigrain porridge (hulled barley, rye, steel cut oats, red lentils, millet-I'm a Dr. Greger fan) but I try the quinoa. Imo, Planet Oat Extra Creamy Original (unsweetened) is THE milk to use on porridge, esp. oatmeal. And just for dairy milk replacement in general. It's so hard to find though!! Most stores only have the sweetened kind or the more dilute kind.
Quinoa porridge? Who would have thought. FYI Anything above about 85c (185f) destroys Vit C. I'll have to try you berry thing but at a lower temp. Looks really good.
If some doesn't like dates, would a little allulose or monk fruit work, or would they prevent it from setting? What if I used one pureed apple instead of the half cup of water, should that work?

Don’t heat your Vitamin C, if you’re wanting it to be a nutrional powerhouse. You could still use the jam, but just top with uncooked berries . Nice porridge though.
For chia seeds in the jelly, if you don't want any of the grainy texture you can blitz them in a grinder and make a super nice vegan jelly powder

This isn't an overnight breakfast. The quinoa has to be cooked on the stovetop; it can't be soaked in fluid in the fridge overnight.

Does the coconut milk give it a coconut taste? Is there something else I can use instead?
didint think of quinoa of a breakfast kind of thing but i have to try this but i think id like to mix it with oat porridge cause i love my oats

It looks good but I have to say I think I'd still prefer my multigrain porridge (hulled barley, rye, steel cut oats, red lentils, millet-I'm a Dr. Greger fan) but I try the quinoa. I just prefer the varied texture. Thanks for the suggestion.

Just out of curiosity, could you make that porridge with another kind of milk to avoid the saturated fats in coconut milk?
I had the same question. I think that I would add a creamier plant based milk.
I'd try 3.5% oat milk or blend some cashews with water
You can use whatever plant milk you want and then add a bit of ground flaxseed to make it creamier.
I use 1/3 soy milk and 2/3 water to make my rolled oats and they come out nice and creamy, would work well in this too I think.
Imo, Planet Oat Extra Creamy Original (unsweetened) is THE milk to use on porridge, esp. oatmeal. And just for dairy milk replacement in general. It's so hard to find though!! Most stores only have the sweetened kind or the more dilute kind.
Quinoa porridge? Who would have thought. FYI Anything above about 85c (185f) destroys Vit C. I'll have to try you berry thing but at a lower temp. Looks really good.

If some doesn't like dates, would a little allulose or monk fruit work, or would they prevent it from setting? What if I used one pureed apple instead of the half cup of water, should that work?

Generally, unsweetened soy milk with (or without) coconut extract is a good substitute for coconut milk.

Quinoa has more protein than most other grains so should be more filling.
How many grams of protein total for the bowl shown at the end?
Would be curious to know the macros on those recipes. I can handle having the same overnight oats every day but on some rainy days I'd love to have something that's more sweet AND has similarly good macros. :)

Your best bet is to google for the info instead of waiting for some stranger to answer you -- esp. bc you have no way of knowing whether the stranger is knowledgeable. Dr. Weil's website and Healthline are both great sources of reliable info.

I learned to drink coconut water mixed with chia seeds before distance runs from reading Native American history.
So what does this do to a diabetic's blood sugar?
All I saw was a bunch of high glycemic carbs going into that recipe (except for the coconut milk). Probably not a good choice for someone with insulin resistance/ metabolic syndrome.

Don’t heat your Vitamin C, if you’re wanting it to be a nutrional powerhouse. You could still use the jam, but just top with uncooked berries . Nice porridge though.
