    For chia seeds in the jelly, if you don't want any of the grainy texture you can blitz them in a grinder and make a super nice vegan jelly powder

      A coffee grinder does a good job for this. It also helps you absorb the seeds' nutrients instead of having them pass through your system undigested.

    The cheaper version you can use is hulled millet. Very similar nutrients (in fact it's being used on space flights for the macros). Can be porridge or rice substitute depending on how long (and mushy) you cook it. Can also grind it into a flower for baking. Also a plus, it's gluten free. It's been a middle east staple for thousands of years. Mostly as a bread or breakfast porridge.

      ​@@sherril.562 I'm not sure about the usage of the word 'millet,' but botanically, millet is a grain or cereal that comes exclusively from the grass family. Quinoa, on the other hand, is a pseudocereal belonging to the amaranth family, just like spinach.

    Just a note to vitamin C; this vitamin is very unstable and will denature when exposed to temperatures over about 140 degrees Fahrenheit. Cooked fruit and vegetables are not going to provide any significant amount of vitamin C. This goes for many other vitamins, too; mentioning Vitamin C here specifically because it was mentioned in the video.
    By the way, love the idea of quinoa porridge! I have made it with buckwheat and millet before - also very nice. 😊

    What I’ve been doing for years is to pre cook my grains in the IP and then freeze in ziplock or silicone bags, flat. If you give it a shake every now and then in the first couple hours, it doesn’t become a solid block. I do the same for beans too. Amaranth that is super tasty in porridge I freeze on a tray and portion with an ice cream scoop. In the morning I mix and match my grains: a tablespoon of buckwheat, quinoa, sprouted oats or a “ball” of amaranth, whatever I want, I add some beans: usually Spanish pocha or cannellini, lentils or chickpeas, or black beans and add to the instant pot, then I add some frozen banana slices for sweetness, and a little water so it doesn’t stick: 5minutes on low. Everything is already cooked, then I open it shouldn’t be soupy, just right. Inswitch to low sauté and stirring I add some cacao powder, I like intense and bitter. Diluite with some soy milk, add Ceylon cinnamon and cardamom. If you pour very hot on some frozen wild blueberries or berries they will defrost and create a beautiful juice. Top with some nuts and be in heaven!

      I make vegan cookies (oatmeal raisin or chocolate chip) using chia "eggs"; the seeds add a nice texture and flavor. Chickpea "eggs" work better, but I'm out of chickpea flour. If you try the latter, know that chickpea flour is very bitter when it's raw, so you won't enjoy eating any leftover batter, but the bitterness disappears during cooking.

    I really appreciate these videos a lot. I’ve been trying to take care of my health and eat more fruit, veggies and fiber-related things. I have a lot of food-trauma that I won’t get into too much, but your videos help make me feel safer about trying new things in ways i hadn’t thought of before.
    I even tried some quinoa mixed with white rice! I didn’t like it very much, and I’ll have to adjust the ratio, but the point is that I tried it, when I probably wouldn’t have before.
    Thank you for helping me eat better as a stranger on the internet in a place where my mother failed me and actively tried to harm me.

    Love the quinoa idea! I’ve been making a mixed grain porridge/oatmeal with oats, red lentils, amaranth and buckwheat groats. Quinoa can join the mix ☺️

    Two thoughts about porridge, esp. for Monica (bc I also hate mushy food, and bc I also didn't eat any type of porridge or oatmeal when growing up -- my mother never made it):
    1. Steel-cut oats have a much nicer texture than rolled oats ( = less mushy). Use regular steel-cut oats, not quick-cook, and make 4 servings at once to save time.
    2. I cook my steel-cut oats with much less water than is recommended -- that also makes them less mushy.

      Barley is a nice substitute/addition, too, as it holds up well and has a similar cooking time to steel cut oats. I like adding lentils to round out the nutrition, but that wouldn’t be for everyone.

    Thanks! I ordered my Body Pod before you even finished talking about it. I need it, I am serious about this health journey and you are such an inspiration. Especially seeing all of the WFPB options you are presenting us with. I am a raw vegan but still get so many ideas from watching you. My next experiment will be mixing teff flour with overnight oats or chia seeds.

    thawed mashed strawberries mixed with chia overnight is SO good! Sweet and fresh. Dont use mixed berries you get allot of seeds of the blackberries and raspberries. Wild blueberries/blueberries and strawberries are great for it

    For the jelly without sugar, you could use some natural pure apple juice in place of the water, or juice the heart of some apples (with the seeds) with a juice extractor. Apples have pectine and it's used to make natural and plant-based gelling agent.

    Big fan of oatmeal here, but I'd NEVER considered using quinoa as a stand in before. Tried it today and it was fantastic! Even without the jam. Just cooked it up with some raisins and dried apricots and I'll be back for more.

      It was actually a raw vegan nog recipe. I was into that super restrictive diet once. Just fyi...
      "RAW VEGAN EGG NOG
      1 cup pecans
      4-5 cups water
      1 cup dates
      1 teaspoon cinnamon
      1 teaspoon nutmeg
      2 teaspoons vanilla extract
      Blend it all up. Use hot water if you want a warm drink. It should have the consistency of egg nog but if it's too thin, add more dates or pecans. If it's too thick, add more water. Change the spice amounts as you like. Mmm... This will serve around 4 people."

    I like the fruit jelly, I would make this. I like to mix oatmeal and quinoa for a creamier texture. One tip, get the ball jar funnel. It makes them so much easier fill and keep everything cleaner.

    Quinoa for breakfast sounds great. I'm going to try it. One note - cooking strawberries causes them to lost most of their Vitamin C. Still tasty though!

    Suggestion in order to receive optimal nutritional benefits.
    Make sure you buy the chia seeds as a whole seed, not pre-ground.
    When you are ready to make the fruit mixture (or anything with chia or flax seeds), grind them right before using them.
    When you add the whole, you miss out on a lot of the nutritional benefits. At the same time, the longer they have been grounded, the nutritional profile depletes, and you also lose nutritional benefit.

    Detoxinista's Quinoa I've been eating for over a decade, it's amazing. I love to instant pot it on low pressure for 12 minutes then natural release.

    I like prepping a sheet of sweet potatoes. I can quickly grab a small one by hand and eat it as I leave the house. Or I can throw a few small ones broken up and a can of beans covered with hummus. The meal options are nice for me. Easily digestible.

    ok.. so for the first time I feel inspired to make this overnight breakfast! I couldn't get past people eating cold soaked oatmeal and such, cold porridge, seemed weird, but I like the way you made that and it is quinoa instead of oatmeal.. and that you can eat it warm. and the jelly its awesome.. 😃 Can't wait to try it.. thanks!

      This isn't an overnight breakfast. The quinoa has to be cooked on the stovetop; it can't be soaked in fluid in the fridge overnight.

    The downside of eating quinoa and chia seeds every day is that they're high in phytic acid which prevents your body from absorbing the nutrients you'd otherwise be getting pretty significantly. For that reason it's best to soak the quinoa or chia seeds overnight before cooking which will remove most of the phytic acid content making it much healthier for you.

    I'm on a low carb diet, tried quinoa and found it really spiked my blood sugar. So if you are eating carbs it's probably OK, but otherwise avoid. Also while famous for it's protein, it's a protein with a low diaas score. I don't think it merits it's good reputation as a healthy food. I think oats would be better for you that the quinoa. The chia jam on the other hand, brilliant I will certainly try this.

    It looks good but I have to say I think I'd still prefer my multigrain porridge (hulled barley, rye, steel cut oats, red lentils, millet-I'm a Dr. Greger fan) but I try the quinoa. I just prefer the varied texture. Thanks for the suggestion.

      You can use whatever plant milk you want and then add a bit of ground flaxseed to make it creamier.

      I use 1/3 soy milk and 2/3 water to make my rolled oats and they come out nice and creamy, would work well in this too I think.

      Imo, Planet Oat Extra Creamy Original (unsweetened) is THE milk to use on porridge, esp. oatmeal. And just for dairy milk replacement in general. It's so hard to find though!! Most stores only have the sweetened kind or the more dilute kind.

    If some doesn't like dates, would a little allulose or monk fruit work, or would they prevent it from setting? What if I used one pureed apple instead of the half cup of water, should that work?

      Generally, unsweetened soy milk with (or without) coconut extract is a good substitute for coconut milk.

    Would be curious to know the macros on those recipes. I can handle having the same overnight oats every day but on some rainy days I'd love to have something that's more sweet AND has similarly good macros. :)

      Your best bet is to google for the info instead of waiting for some stranger to answer you -- esp. bc you have no way of knowing whether the stranger is knowledgeable. Dr. Weil's website and Healthline are both great sources of reliable info.

    Don't use the decimal if you're using a cent sign. .30¢ is equal to three tenths of one penny, go with 30¢ or $0.30 instead, both are thirty cents.

      All I saw was a bunch of high glycemic carbs going into that recipe (except for the coconut milk). Probably not a good choice for someone with insulin resistance/ metabolic syndrome.

    Don’t heat your Vitamin C, if you’re wanting it to be a nutrional powerhouse. You could still use the jam, but just top with uncooked berries . Nice porridge though.
