One of my favourite ways to prepare fish. We really enjoy capers. This time I used Lubina fish (I am in Spain) which I think in English is a type of bass. A fine fish. The simple fresh tomato, touch of garlic, lemon and abundant parsley is such a delicious topping for the fish...garnished with the fried capers. I did indeed have to add not a little water as suggested but a splash of the white wine I was 'enjoying' as I cooked. SOOOO good with just a salad and a rustic baguette (or rice as my husband preferred this time). Thank you again!
i always had a curious about the lemon once squeezed into a hot coated pan .......ain't the juice from the lemon will destroy the pan if the juice stay at the pan for too long? ??
I'm not sure what area you're from but most white fish are quite suitable for this recipe. Buy a whole fish that's filleted skin on. Snapper is quite delicate and very tasty fish with succulent flesh. It's not dry.
melissa pintone red snapper is a fairly common fish to find, but if you cannot get it, you want a fish that is flaky when cooked, stay away from tina steaks, swordfish steaks,etc... they are good, but not really flaky. Try looking for sea bass, red drum, halibut, cod loin or fillet, wild caught trout, tilapia, orange roughy, all of those should work, have a great meal, and God bless
Joel, or anyone else on here, capers are a very unused item in the U.S., and i do not think i have ever eaten them. I know have never used them in a recipe. Are they normally/always used with fish in a sauce ? All i know is they are a berry from a bush. Anyone with suggestions out there ?
manisa bunyasiri i live in rural kentucky, 90% of the people here don't know what a caper is, and 5% out of the 10% would say its a joke you pull off on someone, you know, "you should have seen the caper he pulled at the tractor supply store"
@@stevelogan5475i'm from Greece, we usually put capers in our salads, tomatoes cucumbers olives and fetta cheese. Capers are very salty, so we don't add alot of salt to the salad. Hope you try it.
Not all Mediterranean countries use the same recipes, when someone states "Mediterranean cuisine" it means they share a lot of core ingredients but not necessarily recipes. There is no traditionally Mediterranean recipes, the traditional part equates to the recipe owner of a specific country not the group itself. Recipe30 you have me confused with ?We don't filet fish that's is western stile! We prefer fish on the bone.BBQ not in pen ( SNAPPER) NO-NO.
vilko skorlich I think Mediterranean is referring to certain flavors such as combination of tomatoes, garlic, capers, olives and lemon. Those are much more typical of Mediterranean cooking/food than in western cooking.
i have tried it and i have to say that this is NOT a good recipe. the taste of the olives and capers is too strong and it taking over so you cannot even taste the fish.
