Be careful with the Himalayan salt it does have some side effects. Read on it before you use it. Recipe looks great and I will definitely try it but will go with a little bit of the original Iodized salt, not too much.

What side effect with pink Himalayan salt?
Iodized salt has side effects and there nothing "original" about it. Celtic salt is the absolute best.

You can skip honey but you won't get the sweet taste. The honeu just neutralizes the sour taste from lemons and mustard. Yes you can use thyme.
