Baked yesterday...it turned out great! Just one question, the batter was very thin. Is this normal for this recipe. I measured accurately. The icing was amazing! Loved the creamy texture!
It's only half cup boiling water, not enough to cook the eggs. Mix is quickly and you will be fine. Yes, you can double for 2x7" cakes. They will be higher cakes.

I have used 2x6" pans. For one pan, start checking at 40 minutes then every couple of minutes after that.

Fabulous! Yes, thin batter is normal...just check with a toothpick.

1- doesn't boiling water cook the eggs?
2- if i want to make 2 7 inch pans i double the recipe?
It's only half cup boiling water, not enough to cook the eggs. Mix is quickly and you will be fine. Yes, you can double for 2x7" cakes. They will be higher cakes.
