I hope you will try this delicious seafood salad. The addition of baby shrimp really makes this dish. Don't forget to use the Rockin Robin super fine dice. It really makes a difference.
    Ingredients:
    2 cups macaroni noodles
3 stalks of celery, super finely chopped
1/2 of a yellow onion, super finely chopped
    1 hard boiled egg, chopped
    1/2 lb cooked baby shrimp
1 cup of mayonnaise, more or less to taste
    1 Tbsp. mustard
    salt and pepper to taste
Directions for how to make shrimp macaroni salad:
Hard boil the egg by placing an egg in a pan of cold water. Heat the pan over high heat.
When the water starts to boil, cover and turn off the heat. Let the eggs cook for 17 minutes. 18 if using extra large eggs.
When the egg is done, pour out the hot water and fill the pan with cold water. When the water turns warm, replace it with more cold water. Add ice to chill quickly.
First boil the noodles according to package directions. While noodles are boiling, finely chop the onion and celery.
If you have the immersion blender like I show in the video, you will have this part done in a flash.
Otherwise, start off thinly slicing the onion and celery and then chopping in the other direction. This will get it done quickly. And remember, chop until it’s super fine.
Place the onion and celery in a large bowl. If the noodles are done, drain them in a colander and rinse under cold water. Use your hand to mix the cold water through the noodles.
Don’t stop mixing until all the noodles are cold. This is important before we add the mayonnaise and shrimp. We don’t want to encourage bacterial growth by combining hot and cold foods.
Add the noodles to the bowl and mix well. Add the mayonnaise, mustard, shrimp and some salt and pepper. Mix well.
Peel and chop the egg into fairly large pieces and stir in. Taste and adjust salt, mayonnaise and mustard to your liking.
Cover and store in the refrigerator until you serve it.
This shrimp macaroni salad can easily be doubled, tripled or even quadrupled as needed.
    Thanks for watching and sharing!

okay...I know you posted this 8yrs ago but I needed this recipe today, it's April of 2024, and THANK GOD it exists. I've been scrolling through and watching countless videos for an easy and quick shrimp salad recipe that requires very few ingredients.... Ingredients for the recipe that I have on hand and aren't bougie or hoity-toity fancy stuff (who actually has mayo with horseradish or fresh chives and dill accessible at a moment's notice?). After 3 days of searching for the perfect recipe, your video popped up and I'm grateful so I 👍🏻 this and saved it. I'm excited to prepare it as I lay everything THAT I ACTUALLY HAVE out on my counter. I'm sure it's going to be amazing. It has to be. I waited for this too long 😂. Thank you and I'm subscribing now.

Excellent shrimp macaroni salad. Fine chopping vegetables is important! Another chef on here cooks his veggies slightly (big pieces too), but this is the best way. Cavatappi (cork screw pasta) would add to the visual. Love this!!!

You got a thumbs up as soon as I saw the word "shrimp." I can't wait to try this. And that's one hell of a BBQ island! I made that cold pasta salad that you did with your niece a few days ago, and while I really liked it, I had to add some chicken because I had to either use it, or lose it, so I figured I might as well mix that in as well. Like you, some of what went into my salad was produce that I grew organically. Thank you so very much, Robin.

  • @windella

I like to add minced green bell pepper, minced dill pickle and for the dressing I add a little Italian salad dressing to mayo.No mustard.I like a super fine dice to the vegetables too. Never added shrimp, must try!

I'd leave out the onions, and put onion powder in the dressing.

Looks really good except for the onions. A little heavy on the onions for my taste. I would probably use green scallions or chives instead, and use less. But otherwise, yummy! :-) Thumbs up!

Seems like it would be bland

    • @RockinRobinCooks
      @RockinRobinCooks  5 років тому

If you make this salad just as I show it won't be bland. The minced onion and celery give it so much flavor. The shrimp takes it to a whole new level. Try it yourself and see. Then let me know.

Horizontal cuts are absolutely unnecessary on onions. You wont add much to the already existing layers of the onion.

Hi Abdou, I think you should give it a try. Make exactly as I do, specifically chopping the onion and celery super fine. I think this recipe will surprise you.
