Blueberry Cake with Michael's Home Cooking

  • I love Blueberry Cake and serve it with Blueberry Sauce. It's good!
    Ingredients:
    12 ounces of butter
    1 and 3/4 cups sugar
    4 eggs
    1 Tablespoon lemon zest
    2 teaspoons vanilla extract
    3 cups cake flour
    2 and 1/2 teaspoons baking powder
    1/4 teaspoon salt
    1 cup lemonade
    1 and 1/2 cups fresh or frozen blueberries
    Glaze:
    2 cups powdered sugar
    1/4 cup water or rum
    Blueberry Sauce:
    1/2 cup sugar
    1 tablespoon of cornstarch or 4 teaspoons cornstarch
    1/2 cup water
    1 and 1/2 cups frozen or fresh blueberries
    Some lemon juice or rum would be good in this as well.
    Bake your cake 45 to 55 minutes @ 350F
    To make lemonade... use 1/2 cup lemon juice and 1/2 cup sugar and 2 cups water.
    or 1/4 cup lemon juice and 1/4 cup sugar and one cup water.
    Either way, you will have some left over lemonade.

    I always enjoy what you make, but this time I have to rave over that bundt pan, I like it. I used to bake a lot when I was a lot younger, and I had one bundt pan. It belonged to my mom, nothing fancy, it even had one of the domes dented in. Lol! For some reason I never went and got another one. Then I stopped baking and to be honest I don't know what happend to all my equipment. Watching you guys on youtube woke up my love for baking and I've got my daughters getting new stuff as we go along. Stuff so expensive now a days. My daughters don't even blink. I feel like I was asleep for years and woke up in another time. Lol.

      I wish you kept all your things, most are not made as well these days. Some of the best bakeware now (in my opinion) is called DoughMakers. I bought the bundt pan last year as I do not bake too much but needed one. It is a copy of the original bunt pan.

    Something tells me your version of blueberry cake is a stand out. It looks like the perfect texture & I'm sure that glaze put it over the top. I going to have to try your blueberry cake & your cinnamon roll cake.

      HAHA!!! You know how much I love the peach. NOT!! LOL!! And we stocked up on blueberries when they were $1.50 a pint on sale here. Couldn't turn em down at that price!

      I went to the store to buy some lemonade and they did not sell it. I bought some lemons and made it. It puts a little more lemon flavor into the cake. I love blueberries!

      ***** BUTTER all the way baby lol... never was a fan of margarine, I use tenderflake lard for pie crusts, butter whenever I can. I am a firm believer in natural ingredients and PORTION CONTROL, so I am quite happy to eat fat and sugar rich home made treats, just not the whole cake lol. Sadly for our society my body size has gone from average to slim without my changing, everyone is getting bigger.

      west-island kev I finally made this and it is awesome, omg i served it with ice cream and whipped cream and it was decadent extreme. The lemon zest is really nice combined with the homemade lemonade. I love lemon cookies so this was a winner too.

    Yummmm. Don't you just love blueberries? I swear I could smell that cake here in the Bay Area! I saw kitty too. Heard a half of a meow. I have a Lynx Point Siamese named Cooper. He's a BIG guy. He's a 20 pounder. If he's awake, he's making noise. Quite vocal and my son and I know his language. Boy they train you! Thank you for this recipe!

      It would be a little work, but a whisk would be fine to use. Remember back years ago, that all cake mixes would give instructions to mix the cake 400 strokes, etc.

      Yes, I find it a chore but I still do stuff low-tech for the most part. I like bundt cakes, and enjoy doing Alsatian kugelhopf, but that takes patience and needs to bloom for a day. That's a staple food there, very funny! Pastry and bread and things tend to be so good in France, it makes no sense to do them myself, it's no savings, either, but I still like to try. Not a baking nut -- but this looks very doable, interesting. This picky Parisian spouse will try and probably eat a bit of that. I love getting berries, anything nice, fresh, local, seasonal. I am trying to use to a passle of brown eggs I got for a song. This clip is nice -- good demonstration. xo

    awesome cake. I'd add one pat of butter to the blueberry sauce as it's cooking to give it great flavor.

      I have never used a sugar substitute. If you have used a substitute in baking and it works then you know more than I do :) So yes! If there is one out there that works, yes!

    I love blueberries and I also bake cakes using my Kitchenaid, but I use the whisk attachment in order to add air to the batter and add some lightness to the cake. Have you tried this?

      Using the whisk attachment would be fine. The only reason that I do not is that I am afraid of over mixing the flour into the wet ingredients.

      I was looking around UA-cam and noticed how to change the channel name. I have no regrets and think it is one of the best things that I could change. When I made the channel seven years ago, I never thought that I would make videos.

    Don't you love how butter/sugar gets all fluffy when you mix in the eggs? I do - it is so pretty! Oh, that's a beautiful batter! It made a lovely cake. Did you hear me? When I was shouting ' Lick that spoon!' then you said you would. :D Excellent video. You make me wish we had company more because if I made that with just us, we'd be in TROUBLE! :) Fun to watch and drool over though. With a side of sausage and eggs, it would make a great breakfast.

      Cakes were made for years and years without a mixer. Everything was mixed by hand. The recipes would call for 50 or 100 or 400 stokes. You can still make cakes this way :)
      You can try your stick mixer, it might work!
