    AS USUAL, baked this cake earlire to gift the medical staff/nurses at the cancer ctr where i'll go for an unfusion tomorrow! following your exact menu, was surprised that you add no zest/juice to the cake, but will add zest when i prep the glaze later as i've been the zest has more flavor than the juice! had b'berries that i had to use so opted to make this cake! it looks beautiful as yours and hoping the glaze adds a nice lemon flavor! thx again, Stephanie:):kelli

    I've found out that after buttering the cake pan, it's better to sprikle it with breadcrumbs and not with flour. The humidity of the hot cake gunks the flour, plus I find it more difficult to remove the cake. With breadcrumbs these two problems are eliminated and the breadcrumbs won't be noticeable at all.

      Normally I just whisk the flour, but you could sift it.

      You could use cake flour. Not sure about using cornstarch to coat the berries as I've never tried doing that.

      You could half the recipe and use a loaf pan.

      You could but not having tested it myself I can only say it would be less.

    Actually you may not want to put flour down your drain as it absorbs water and bulks up, and will eventually clog your pipes. Fantastic recipe, anyway.

    Made this today and I honestly didn’t like it. It was too dry for my liking. Followed the recipe and temperature exactly how it was instructed and I feel like something else could’ve been added for moisture. The taste is good, just too dry.

      If it’s too dry it was over baked. Try baking it a little less or checking you oven with an oven thermometer. It might be running a little hot.

      @@joyofbaking Thank you for replying. I'll have to try that next time. I baked it for 60 minutes, inserted the toothpick, and it came out a little wet so I baked it for another 10 minutes. Do you think if I would've left it in the oven after the 60 minutes it would've finished baking with the left over heat from the oven? I thought about doing that, but didn't want to risk having a cake that wasn't done all the way.

    I thought one cup of flour is supposed supposed to be 120 grams. Why is this recipe calling for 3 cups or 390 grams of flour and not 360?

      I know King Arthur flour has on the bag that one cup is 120g but honestly that is low. Try it yourself. More realistically it is 130g or more if you scoop it into the cup out of the bag. In this video I demonstrate how the weight can vary over 25% depending on how you put the flour in the cup using King Arthur flour. ua-cam.com/video/nF3vFMYOM8Y/v-deo.html
      In any case I test all my recipes in grams and convert to cups so if you use grams you can ignore the cups and ignore the error.

    Can I use cake flour instead of all purpose flour?

      Yes, you could use cake flour. But cake flour will give the cake a more soft and tender crumb. So if your blueberries are quite heavy you may find they fall to the bottom of the pan during baking.

    Thank you, thank you, thank you. You are just phenomenal. I just recently discovered you. Tried 5-6 of your recipes till now. Everyone turned out just exactly right. For me, celebrity chefs have nothing on you. Their recipes are usually half baked ( no pun intended). It is so obvious you put effort and love in what you do. Very big fan.

    Ijust started watching recently. I brought some dry blueberrys from Florida, i would like to use them up. How do i do it for the cake.

      You could use dried blueberries. If they’re not soft, then you could place them in hot water for a few minutes, until plump, and then pat dry before adding to the batter.

    I baked this twice. first time for 60 mins, noone couldeat it it was hard as a rock. next for 45mins, still very dark and hard. I think next time ill bake for 35mins.......

      Are you using a dark colored pan? If so, reduce the oven temperature by 25 F (15 C).

    Hi Steff,
    made this cake again a little while ago to gift to my therapists, as i consider them 1st responders and they always deserve 1 of my baked goods! i did add some zest when adding the berries, and mistakenly melted the butter but otherwise followed your directions to a tee! also added some berries to the pan after the flour! it looks/smells great and will ice it now; might have like to 1st do a glaze of lemon/sugar as many others chefs do, but didnt!! thx again, will request a small slice once its delivered!:): Kelli

    It looks very similar to what we call a Madeira Cake/Cherry Cake but as its hubby’s birthday on Wednesday I am going to try this. Because of the quarantine I cant get out and I only have frozen fruit which will have to do but I will give it a try, because it looks delicious as always. I never have much luck with my Cherry Cake, it always look like it has acne with all the fruit at the bottom!! 💐💐
