Hi! Panna cotta is Italian for cooked cream. I don't know where she got this 'half and half' from, but all you need is double cream / heavy cream to make this. Also the whole sieving....what's all that about? you don't need to sieve it. If you take your time in allowing to bring the cream to simmering point (definitely not using a whisk and stirring slowly), your cream shouldn't curdle or get lumpy. Also. for gelatin that is in grains, you actually need to put it in simmering water on the hob. that will allow the grains to dissolve, and then you add it to the panna cotta about 20-30 seconds before you plan to then put the panna cotta into the bowl / ramekins etc. you pour in the gelatin slowly, give the mixture gentle stirring and then pour immediately into bowls / ramekins. you only put gelatin sheets into cold water and wait for them to soften, then drain with hands and add to the cream. I've been making panna cotta with my nonna since I was 6. sieving, whisking, weird half and half....the hell is this???
Well, I only agree with part of your point. I mean, different people have different ways to cook. As she said," do what your heart desires." This is basically for beginners to learn how to make Panna cotta. Maybe those sieving and half half make Panna cotta taste better, you never know right? After the criticism, we still need to appreciate her time and work

There are many variations of panna cotta, this one is one of the best. Well presented by a lovely lady who appears to be very confident in what she does. I'll be trying this recipe.

Ok, I'm not criticizing Laura, because I've tried to make some of these recipes, and they were amazing, but I love how she says every step that she does is PERFECT. I don't think ANYONE could do things perfectly (other than God and Jesus[If you're a Christian like I am])

agar-agar is widely used to substitute gelatin: derives from a kind of seaweed, so it's vegetarian friendly. :) it comes in flakes and powder (1 tbls of flakes = 1tbls of powder), and it substitutes powdered gelatin measure for measure. just like the gelatin, you need to let it sit for 5 minutes or more to soften. personally, I've never tried it 'cause I never found it, but many websites will give you more details! :)

you can also put water, it will also work because the gelatine is going to bind the ingredients! it just won't taste the same!
Watching Laura's videos is the only way I can fall asleep at night. It's better than warm milk.
