Poach in the fat on low temp until soft. Keeps a good long time in the fridge.
I love thinly sliced bell peppers in the center with cheese. Also roasted potatoes with asparagus. (which also makes a great frittata) A caprese filling is also delicious. Soft mozzarella, fresh basil and halved cherry tomatoes.

They look delicious, although they look more like pancakes to me...I normally cook them with olive oil and add the fillings to the egg before putting it in the pan, so the result is more like a fluffy roll. Next step: Spanish omelette! It's more tricky, as you have to flip it instead of folding it, but it’s totally worth the effort!

At least now I know how to make the perfect omelet, so learning is total worth it! Definitely will be adding these toppings next time i make brunch for me and my mom.

I always end up browning the bottom of my omelette before the top even solidifies. I would try and flip the whole thing to cook the other side and usually end up messing that up! I've tried cooking on super low to medium heat and nothing works... but this, the idea of scrambling the eggs first, is genius! I will have to try this next time! Thanks Sara!

Try sauteed spinach and Cheddar cheese. Another combination I cook is an omelette with buffalo chicken spices mixed in eggs and then add sauteed spinach in it and cheddar cheese on top. Thanks for these omelette varieties.
This is how I make an omelette. Beat eggs in a separate bowl. Mix in a little ranch and garlic powder. Heat an oiled non stick pan to almost high heat (8 on a 10 scale), pour the eggs in and tilt pan around to get runny egg onto naked areas of the pan. Turn off the heat because they will cook instantly. Then sprinkle shredded cheese and add vegetables that have been sauteing in butter in a different pan (mushrooms, bell pepper, spinach, etc.). Fold the omelette and transfer onto a plate. Top with whatever you want (cheese, green onion, parsley, pepper flakes). Turns out great every time.
Here in holland we eat thinks that are called stamppot. its mashed potatoes with greens, like kale or whatever. But you can mix in anything you want. Delicious autumn/winter dishes. Can you please make some awesome variations ?

Any liquids you add to the eggs diminishes the egg flavor. I make them almost daily for family and never add milk or water. Try it for yourself.

I try to make omelette's, but inevitably they end up as scrambled eggs
when u pour the eggs into the pan don't move it
when it's cooked from the top and ready to flip...flip it
Pour whisked eggs into the pan and cover it, it will cook it on both sides. No flipping needed.
Don’t flip it. Take it off the heat then put it under the grill to cook the top half. Best tip I have ever been given.
