You remind me so much of my mother, who is also Palestinian. She cooks from the heart just like you. The world needs more women like you and my mother, it's become a lost art nowadays.... I cannot tell how grateful i am to see you cook delicious dishes i grew up eating. It makes me so nostalgic, reminds me of my childhood, reminds me of my father who passed away recently and he LOVED these beautiful Palestinian dishes. It makes me so damn proud to be a Palestinian, watching a Palestinian cook like yourself makes me even prouder as you are sharing with the world the TRUE hidden gems of Palestine that many will never hear about on the news..... God protect you, Chef Noha and please keep sharing your beautiful recipes with the world and most importantly your beautiful soul.
Thank you so much for your kind words! Your comment put a big smile on my face! Sharing Palestinian recipes with the world gives me great joy. People like you are the reason I keep sharing recipes from our beautiful Palestinian culture. Thank you so much for your support! I cannot explain how much it means to me. May your father rest in peace and God bless you. ❤️
Ramadan Mubarak! My sister, an American of Dutch heritage, married a lovely traditional Muslim man from Jordan 24 years ago. He learned to cook from his mother, and he taught my sister to make these dishes in the traditional way for her family and friends, especially during The Holy season of Ramadan. Her youngest son followed his mother closely in her kitchen and cooked with her. He is now in culinary school here in the Chicago area. She and her family all have dual citizenship and frequently return to Jordan to visit relatives. What an amazing cuisine! There are spices and ingredients that I've never heard of, and Jane knows all their secret powers to transform a dish into something unique to her family's culture. I'm proud of her for working so hard to carry on this cooking legacy and pass it on to her sons. I think that there is nothing more peaceful and joyous than breaking bread with family and friends--new ones as well as well as old. Food draws us all together. Please keep sharing your love through your wonderful recipes. They're the best I've seen (and I've done plenty of research). It's your thorough, yet friendly and warm, video tutorials that really inspire me. Don't ever stop!
Ramadan Mubarak to you and your family! Thank you for sharing your beautiful story with us. :) Thank you for your kind comments and support!! You can find more of my recipes on my website stitchingcuisines.com/

Could you pleassss make more video's!! Can you show us how to make falafel and pita bread? Please make more video's. I am married with a palestinian man and i can't cook the food that he loves. His parents are in palestine so my mother in law can not teach me how to cook their meals. I learned a lot from your video's and he likes it too! I am an moroccan but i want to make more palestinian meals for him. Greets from Amsterdam!
Thank you so much for your support! Yes!! Falafel is on my list and will be coming soon! I hope that my videos are helping you prepare more Palestinian meals. :)
Thank you for your support! Yes, in Palestine we also do not typically add cauliflower, but my mother taught me to add it for taste. My family loves it. :)
Wow It looks so good you made me sooooo hungry, at least i got to enjoy your mansaf this weekend. l Love you and your cooking. Keep it up our Dr. Chef!!!
I am so happy, I just asked for this a couple days ago and here it is already :) One question - in one step, you were whisking the yogurt, and in the next step, everything was in the pot with the meat. I think maybe one step was edited out by accident :) Can you just tell us here in the comments how long you boiled the yogurt before you added everything? What did you do with the water from the meat - is it also there or did you take out the water before adding the yogurt? Thank you so much for this wonderful recipe. My dad always made this for me when I asked!! I hope there is a kabsa recipe coming soon too, it's another favorite. I am so so so happy I found your channel!!
Wonderful! Thank you for watching!! For the step by step recipe, refer to my Mansaf recipe on my website at stitchingcuisines.com/. Referring to the video, let the yogurt boil for about 10 minutes before pouring the yogurt over the meat and whatever remaining water is in the pot. Again, this can all be found on my website. I hope this helps! It sounds like you have a great dad. :) I will add kabsa to my list of recipes to make. It's a yummy and easy meal. Thank you for your support! So happy to know that you enjoy my videos!
Thank you for your support! My grape leaves recipe is up on my website at stitchingcuisines.com. It is a step-by-step recipe with pictures. I hope that you try it and enjoy it! :)
Yogurt soup starter is simply a soup starter made of raw yogurt. It can be found at any Middle Eastern supermarket. I use the brand Ziyad. Here is an amazon link: www.amazon.com/Ziyad-Starter-Jameed-Kishk-Concentrate/dp/B017GL23TG You can also make it from scratch. You can use regular yogurt on its own, but you need to add 1 heaping tablespoon of cornstarch for every 2 pounds of yogurt. You can also use dry yogurt without cornstarch. However, I add soup stater and yogurt because it adds a delicious tart taste. I hope that helps. 🙂
that looked so good and yummy, one thing I am having a hard time finding the dry yogurt Jammed ( I am not sure if this is the correct spelling) where do I find it can you provide me a brand name please. I would like to make this dish so bad. I remember my grandmother making it and layering it is it the same thing? back then we had a large family and that might have been her reasoning to make a bigger batch, I am not sure... Thank you again for the recipe and please make more Palestinian food.
WaSalaam, SoupStarter is a specific kind of yogurt that is shipped from the Middle East. It is used when we are not able to find the exact yogurt that we use back in the Middle East. If you can not find it in stores, look for Middle Eastern yogurt. Only use plain yogurt. Two kinds that I use: Karoun Dairy Arz plain yogurt and Byblos plain yogurt.

You can find the steps for my recipe on my website at stitchingcuisines.com/mansaf :)

Dear chef a question, how long should lamb be cooked totally ? And how long did you cook it in the yoghurt? That's not clear for me
Hello! You can find all the details for my recipe on my website at stitchingcuisines.com/mansaf :)
Is the rice basmati? My mom thanks it's lovely and was wondering how you made it! I checked the website but there are no steps to it?
Hello! Yes, I used basmati rice. The recipe is on my website under the link: stitchingcuisines.com/rice/
When making mansaf, omit the cardamom, carrots, and almonds. :)
Stitching Cuisines my mom's mom taught my mom to make the mansaf w/o Zahra, so my mom almost thought it was Zahra and labna
Know a Lebanese woman who makes this, and it always gets eaten fast!

I didn't like mixing chicken and cauliflower in Mansaf meal
