Hello, I loved your recipe, and because I’m vegan too I use tofu based plain yogurt or tofu based sour cream instead of normal one. For the minced meat there are many vegan mince options, so I followed the recipe with the alternatives and it was yummy! Thanks :)

I gotta start with saying I loved your video and subbed to see more. Next, maybe a bit to consider: Hollow the eggplants while raw (like you would for kousa mahshi), fill with meat mix, fry or deep fry to cook the eggplants, then add to the boiling tomato sauce. The stuffed eggplants can actually be bagged and frozen and will last for 1-2 months in the freezer. Makes for a quick fix by throwing the frozen eggplants in a deep fryer, then tomato sauce, then throw on a bed of bread and top with yogurt. Credits to my dear mom.
Looks delicious. My parents were from Aleppo and my mom made similar dish called nezalair ? Spelling. She used large eggplants but no yogurt. I'm going 5o try your version
I use soy yogurt for my vegan friends. I also really love to eat that soy yogurt... there are several different flavors. The brand is called Alpro. By the way I live in Germany. GREAT recepie I'll try it out soon.

I was once a hater of the eggplant. my mom cooked it until it resembled vomit of which she called it 'eggplant parmesan" it was disgusting! i used to work in a grocery store and this syrian lady talked about eggplant very highly. i said i can't stand eggplant and the story about my mom's cooking. she said "no! i will make eggplant for you, you will like." next day she came in with a dish of simple eggplant sliced and she said she only brushed grapeseed oil on them with some breading and put it into the oven. and that was the best eggplant i had ever had.

I would like to thank you for that amazing video, you have well explained the process of making such a traditional Syrian dish. but as faras I know and sicnce I come from Damascus we finish the dish with a last one touch by heating up some Samneh, and adding it to the texture, isn't supposed to be that way? other than that you did an excellant job, keep it up.
