I made a chilli mead and fermented it viking style with normal bread yeast for 1 year. Amazingly it did 18%. I freeze distilled some of it at -18 for a couple of weeks and then let it thaw out leaving the iced water behind. It gave a very intense Chilli mead with a 25% alcahol. Very nice indeed.
I wonder if the priming sugar messed with your gravity reading. Maybe you could take a hydrometer reading of a batch of ice beer that does not have priming sugar added and then compare it to the FG of the beer before it went in to the freezer

This is called freeze distilling. Flavor compounds and alcohol heavy slurry will come out first. this is how you make traditional applejack, no "real" distillation necessary.
No need to prime if your freezing it since freezing will kill the yeast and even if it was alive the alcohol is to high for it to worg. But I guess the sweetness would lift the chocolate flavour though.

Chip if you add a piece of hose to your funnel, the foam will come out and allow you to completely fill your bottle.
