Beef Madras and Naan Bread. Delicious Curry Cooked on a Campfire. Making Naan Bread. Making Ghee.

- In this video, I head out to the woods with my faithful companion Maggie, to do a bit of cooking. On the menu this week is curry - a belting beef Madras with Naan bread.
After setting up a tarp to protect us from the rain (that never materialised) and collecting firewood, I start preparing this mornings feast. First job is making the Naan Dough, then making ghee, an important ingredient needed for today. With these made, it’s time to focus on the main event - my favourite curry, a Madras.
I can genuinely say that this was the best curry Ive ever made and beats many I have had from restaurants over the years - heat from the chilli, sweetness from the onion and tomato and a delicious sourness from the ginger and lime - add to that a deep and rich flavour from the spices and the silkiness from the ghee - a delightful curry, accompanied by lightly charred naan bread to mop us the gravy.

Recipes
**Naan Bread**
1 cup plain flour
1/2 cup wholemeal flour
1/2 tsp baking powder
1/2 tsp sugar
1/2 tsp salt
1/2 tbsp oil
1/2 cup thick yogurt
Ghee
All oil and yogurt to the dry ingredients and mix well into a slightly sticky Dough
Put aside to rest for at least a 1/2 hr.
Cook in a very hot heavy bottomed pan for about 30 seconds on each side.
Brush with ghee.
Dunk into your favourite curry.
**Beef Madras**
1 tbsp garam massala
1 tbsp ground cumin seeds
1/2 tbsp ground coriander seeds
1 tsp turmeric
1 tsp chilli powder
400g diced beef
2 onions, finely chopped
3 cloves of garlic, minced
3cm of ginger, minced
400g tinned tomatoes
Stock cube or pot
Water
Ghee
Limes and coriander to serve
Dry toast the spices to unlock the flavour.
Fry onions in ghee in a heavy pan or dutch oven until softened.
Add the beef and fry until browned.
Add the minced garlic and ginger, and the spices and fry for two or three minutes.
Add the tomatoes, the stock cube and enough water to cover and simmer for about an hour until the gravy has reduced down and thickened.
Serve with lime wedges, coriander and naan bread.
A woodland setting is optional, but greatly enhances the enjoyment!

A man after my own heart! I love cooking and cannot imagine not doing so camping! I went camping every Fall here in Maine with my old German friend, Hans. He loved cutting firewood. I loved cooking. We had a canoe, beer, wine, my shotgun and my South African iron pot. We'd spend ten days out in the woods camping with my tent, and Hans' old Landcruiser.

I’ve only recently learnt the joys of wild camping and seeing a video like this warms me and makes me a little emotional, the simplest things can be the best and seeing how happy you and your dog are enjoying the simple things in life makes me feel a restlessness that will only be settled once I too am sat out in the woods, messing around like we’re meant to.
No you've got it all wrong. You need a Ferrari and A few Rolex watches to be happy in life.

@@irvsstella I’ve been working for a year in a kitchen as I save for my drivers, while the confining factors and money have been limiting, I’ve learnt a lot and met some nice people but my true goal, of going somewhere truly wild is on the horizon, however I will not neglect the opportunity to be in the local woods again.

Love the Channel Simon and nice to see Maggie . Rarely can I add as there is so much to learn from you, and in such a calm, pleasant and inclusive way …. But I f you use some salt with the garlic and ginger and smoosh the ginger, salt and garlic in a flat surface with your knife (the blade edge) it makes a paste really easily. I think your production quality is superb too, really convivial watching but imparting so much information with nice intros and cuts and visuals and sound track . Glad you have another post out !

On suggestion/question I have is:- why not use your grater to create the garlic and ginger paste?

And put up the tarp!
After you’ve flattened the raw naan put some chopped up coriander and garlic on the board, press the raw nann on to it and cook as normal.

I had a white dog (A Maltese) for 22 years. I thought only white coats showed all the debris! Poor Maggie looked like she had been dragged through the shrubs by her tail! So good to visit the woods today with you two. Blessings on you and your family and friends and any livestock you might have wandering around the house and yard!🕊🌱

I could just imagine the smell of that beef madras wafting through the woods and being beckoned over to try some......Although, I don't think I'd be in a hurry to give it away to a passing stranger. Thanks for sharing the video with us though Simon. It looked so relaxing there sat on a log in a beautiful English woodland. I heard a pheasant in the background a few times and it reminded me of a pheasant madras I made a few years ago. It turned out lovely!!

I generally watch it on a large 55 inch screen and there’s not a way to make comments but I really do enjoy your especially like the ones changing your Land Rover and build it up to make a really nice camping system out of it you’re a great guy and I really do appreciate your videos and keep up the good work my friend touch base with me anytime. My son and I went through boy Scouts of America for many years he ended up becoming an Eagle Scout and we’ve been out in the woods camping everywhere for the last 20 years so we identify readily with the things you run into and find it very entertaining.

That looked so good I could practically smell it, I love curries not to hot though, eating outdoors well it seems like everything tastes much better. I find your videos really beneficial to me because of the health issues I have I can't get out to do the things I love so you are carrying out doing what I crave for in you're video's which does help me with my mental health because I feel that I'm with you, all my feelings come flooding back to me while I'm watching you, the smell of your cooking the smell of the woodlands and everything else that goes with it, thank you so much for sharing you passion with us. Man I wish you could do an extensive canoe trip to either the American Northwest or British Columbia!! I say these destinations as to me the rest of the Canadian trips seem overdone on UA-cam. Just my humble opinion but the Northwest and B.C. Are amazingly beautiful and not overused. Cheers Mate!

Great vid, good to see Maggs as well, food looked delicious, trick I learned for Garlic is a pinch of salt on the clove then use the flat of a knife to smoosh it about, the salt works like a grinding agent and quickly breaks it down into a paste.
