How to Make Gourmet Deer Mushroom & Swiss Burgers and Bratwursts DIY at home!

- In this video, The Bearded Butchers, Seth & Scott Perkins will guide you through the process of making delicious mushroom and swiss deer burgers and bratwursts using their clean spices and ingredients.
The Bearded Butchers begin by combining their 20 lbs of deer trim along with 4 lbs of pork trim and 1 lb of pork fat. Once blended, Scott adds the Bearded Butcher fresh seasoning. They grind the meat mixture together, using their Made With Meat Grinder, and then add their mushroom bits and swiss cheese.
Once the grinding process is finished, The Bearded Butchers then make mushroom and swiss bratwursts links with their collagen casings. Scott will also show the viewer how to use some of the meat to make restaurant - style burgers with a simple at-home DIY method!

Yum! I grind my lean elk trimmings 50/50 with a 70/30 grind of burger. Let's call that base. I then take that base and mix it 4 parts base to 1 part of ground bacon. That becomes my bacon burger mix. I take that mix and grill it as a burger patty. I then take that burger patty and add some sauteed mushrooms and a slice of Swiss cheese and put it between a bun. I call it a Swiss piggy.

They work 5 days a week in the butcher shop.

I’m chasing a manual meat grinder and unfortunately you don’t stock one. Plenty electric versions, but I’m after hand operation. I trust your opinion as you would know what is quality.

By the way, I’m just starting to get into the idea of making my own mince, sausages etc because I will know what goes in it, rather than shop bought flour/etc fillers which are grain based (unhealthy carb), plus these just prior to harvest are sprayed with roundup (glyphosate plus other unknown chemicals) which we ingest…not a very intelligent species are we? What other species grows their own food, then creates harm to themselves by consuming it??

What about us who have post COVID health issues who cannot have dairy, grains pork.. etc?!
