    Next week I'll tag you in part two on my channel where we RIP out the old galley send it up some horribly steep and narrow stairs to get lifted off by crane down to the cement below where it will get loaded into a hearse and retired forever. The Big Galley in the Sky. R.I.P.

      It's becoming easier and easier to stay connected as a community because of social media. I've been doing it for 20 years and you were just chopping away on your own. Now there are FB pages and whatsapp groups where we can stay connected and get advice.

    I've taken some of your advice and a few other very good chefs and some of the people here where I live at have noticed something. My cooking effort has gotten way better than it was in the past.     My husband was excited to see those countertop “saw horses” that Brennan was demonstrating as he is quite tall. Are those available for purchase somewhere or were they custom made? They are brilliant and my hubby wants them! 😂

      Thanks for saying that, we had a lot of fun collaborating on this refit project for sure! More to come, this is just part one. Part two will be on my channel where we rip everything out and grunting and sweating push/pull it off the boat in a really unique way. Part three is back here on Nina's channel to give the final tour of the new galley and cook a little something for Nina to try.

    Thank you Nina and Brennan, a story to follow as the refit progresses. Loved the disaster story, the plaster and finger condom is a great twist on the old tradition of a silver coin or other treat in a pudding. Glad the guests thought it was a prank and the Captain just settled for shouting.

      My thoughts exactly! If I had €125k sitting around I don’t think I’d spend it on a five day vacation, although it would be paradise with chefs and crew like we see on this channel. So I love living vicariously through these videos. 💗

    My old head Chef was also really tall and used to use a dishwasher tray to raise his board up 100mm. He would have loved this raised board arrangement. I’ll have to find where to buy and give him one 😉

    I live in Juneau. My dad was in the Coast Guard and when he got stationed here I looked at him, in 10th grade, and told him that I didn't care if he hit transferred again, I wasn't going. I was home. Alaska is amazing.

    This must have been wonderful to trip down memory lane and be able to reconnect with MY Ariance! That galley does look very capable even before this refit compared to Reverly. I didn't quite understand what was being replaced on the hot plate section of the galley, if you could expand upon that please? Thanks and love your videos (even though you post less often now because you're busy).

    I recently found you on my YT home page and figured why not.... so now I am just bingeing your channel! The knocks on the Americans are always funny and I don't understand why we had to be difficult with everything! The Saw Horses are badass! That is why I do not like cooking in my kitchen just in general... I am 6' and leaning over to chop on the counters bug my back. I am going to have to look that up or look at making my own!! love all the info, techniques, daily life, and locations you share, new and old!
    PS-the Q&A you did with the same Chef in this vid was great! Wages, costs and such(ball parks of course) are all informative considering your stipend/peridium per person pre day. I enjoy just learning in general about different trades since I am in the Construction-Loose Lumber World.

Takoyaki was my first experience buying street food in Japan (under the railway near Senso-Ji) I had no idea what it was and just pointed to the picture, deliciousness ensued! 😂 Later - Kappabashi 'kitchen street', Takoyaki pans for sale 😯 weighed a ton, so didn't buy. Will have to go back 😎

    When we owned our Cookies by Design in Vero we had a 60 qt Hobart Mixer, the thing was a beast. And a smaller Hobart for mixing icing for cookies and smaller Kitchen Aid for small batches. Loved that Hobart though

    That story sounded straight out of the old Lenny Henry Chef! sitcom episode with the inept commie losing a beige coloured bandage in one of the ravioli as it turned out. Then again another (proper blue one) in his boss' meal. I appreciate Brennan's candor but it was probably wise to conceal the name drops.

    In the land based food biz, at least when I worked in it 40 years ago, we called those stainless steel pans inserts as they were meant to go into steam tables. Can I tell you how horrible steam table food can become? You probably know. Thanks for the tour. Envy both of you. Budapeter

    I catered a birthday party yesterday and I forgot my bar height table. I have a 15 skewer oca brazil rotisserie system, had it loaded down with chorizo, picanha, tri tip and chicken breast on these 28 inch skewers. My poor back was screaming while half way through slicing all that hahaha. I'm definitely getting those Risers at any cost!

    Watching this video, I wondered if you were designing a galley from scratch would choose wood paneled cabinets etc., or all stainless steel. I gotta believe that the wood is harder to keep clean, but all stainless must be antiseptic looking day after day.
