It's becoming easier and easier to stay connected as a community because of social media. I've been doing it for 20 years and you were just chopping away on your own. Now there are FB pages and whatsapp groups where we can stay connected and get advice.
I've taken some of your advice and a few other very good chefs and some of the people here where I live at have noticed something. My cooking effort has gotten way better than it was in the past. I appreciate you and your videos and advice. Thanks for all the effort you put out with your tips for us viewers. Just letting you no it really is great info for some of us like me. Thanks again.👍
My husband was excited to see those countertop “saw horses” that Brennan was demonstrating as he is quite tall. Are those available for purchase somewhere or were they custom made? They are brilliant and my hubby wants them! 😂

When we owned our Cookies by Design in Vero we had a 60 qt Hobart Mixer, the thing was a beast. And a smaller Hobart for mixing icing for cookies and smaller Kitchen Aid for small batches. Loved that Hobart though

Then again another (proper blue one) in his boss' meal. I appreciate Brennan's candor but it was probably wise to conceal the name drops.
In the land based food biz, at least when I worked in it 40 years ago, we called those stainless steel pans inserts as they were meant to go into steam tables. Can I tell you how horrible steam table food can become? You probably know. Thanks for the tour. Envy both of you. Budapeter

I catered a birthday party yesterday and I forgot my bar height table. I have a 15 skewer oca brazil rotisserie system, had it loaded down with chorizo, picanha, tri tip and chicken breast on these 28 inch skewers. My poor back was screaming while half way through slicing all that hahaha. I'm definitely getting those Risers at any cost!

Watching this video, I wondered if you were designing a galley from scratch would choose wood paneled cabinets etc., or all stainless steel. I gotta believe that the wood is harder to keep clean, but all stainless must be antiseptic looking day after day.
