Hi! Just came across your video 3 years later! Question… if you feed your sourdough once a week, can you discard half, feed it and put it in fridge and a few days layer when your ready take out, let come to temp on the counter not doing anything to it and let it rise fully then bake with that rise rather than dump half again and wait to rise again? Does that make sense?
Hello Paige! I would like to address a question. When should I start putting my sourdough starter in my fridge? Like should I put in the fridge after I bake my first loaf?
Hi there! Yes I would definitely recommend waiting to put in into the fridge until it is fully active and you have tested it & had a successful loaf. Hope this helps!
I see you bake both sourdough and use a poolish. Well for years I used a straight yeast dough and then went into sourdough. I just started trying a poolish for baguettes and I did a round loaf first time with a poolish. What are your thoughts sourdough vs poolish? Considering a SD starter being ready, it seems a poolish can take longer as it goes into the next day, while I can mix the night before, bulk overnight and bake next morning using a SD starter.

A lady gave me some starter but she didn’t explain how to feed it. Can you give me some pointers, how much starter to use, water & flour to mix together? I am a beginner. I read a lot of info but I am still confused. Thank you 😊
Hello Paige! My starter, organic whole wheat , was six days old last Thursday. I had started with 35g F/ 35g water. I had a 911 and had to leave for the weekend. Today is Monday. She looks great and smells great. ..I'd like to make bread this coming Sunday. When would be the best time to feed her? On Saturday? And what is the best recipe for 1 loaf of SD Bread.? Thank you so much!
Hi Victoria! Thank you for the comment ☺️ I’m so glad to hear your starter is looking good! I’d feed her on Saturday, about 24 hours before you plan to prepare your starter for the bake! I love the Intermediate Sourdough Recipe cut in half so it only bakes 1 loaf. Hope this helps!! 😉

I just threw out my starter a couple of weeks ago because it smelled like vodka, lol. I am glad to know that it can be saved next time!

Equal portions of starter, flour, and water. Use a scale. Use some whole grain wheat and maybe some rye. Use un chlorinated water.
