Butternut Squash & Carrot Jason Vale Soup Recipe

    Creamy smooth butternut squash and carrot infused together to create a genuinely dreamy, sublime, nourishing soup.
    SOUP INGREDIENTS (Serves 2)
    1/2 Butternut Squash
    3 Medium Carrots
    1/2 Small Red Onion
    1 Tablespoon Vegetable Oil
    1 Vegetable Stock Cube
    550ml Boiling Water
    1 Pinch Cracked Black Pepper
    1 Pinch Salt
    HOW TO MAKE
    Peel and remove the seeds from the butternut squash. Peel the carrots and red onion and then chop all the vegetables into small chunks. In a large saucepan heat the oil and add all the vegetables and seasoning. Gently sweat the vegetables over a medium heat with the lid on for 15 minutes, stirring occasionally. Meanwhile, boil the water and prepare the stock by dissolving the cube into it. Add the stock to the pan, bring to the boil and simmer for 10 minutes. Remove from the heat and, using a blender (hand or jug), blend the soup until smooth. Pour into a bowl and enjoy.

    I literally have 40 lb of carrots and 30 lb of squash and I'm glad it's not going to waste. Feeding a few families

    oh I can't wait to be squash season :) I love this soup so much, usually I top it with pumpkin seed oil and toasted seeds of the pumpkin :)

      marisol cadriel try to add a little chilli if you like the heat and nutritional yeast for cheese flavor 🙂

    I made this, but added a zucchini and a half cup less water (it was in my fridge and needed to get used). Soup came out just as creamy and delicious, if only a bit dingiest in the orange color

    I am not a soup person, so I was really hesitant to do the 7 day Juice and Soup - I made this soup tonight and Oh Em Gee this is gooooood! I added a pinch of pepper flakes for a little kick - i will be making this again for sure!

    Hi, so I just got back from visiting Ireland, all the pubs have veg soup, blended. One was carrot with coconut milk, so good. Please make one, teaching about coconut milk, or water, or oil? Your the best ,thanks.

    Yay, finally a great recipe found for butternut squash. Two times I’ve bought from Costco and went sour. Had to give to my piggies 🐷. How long does it last diced up in fridge? Can’t wait to make this soup. 🙏🏻

    Hi Jason have tried this soup and it is delishous but I have to say that I am disappointed that you recommend using "Vegetable oil" I thought you would be health savy and know that Vegetable oil is not actually made from vegetables and it is the opposite to healthy it is deadly, I of course used olive oil and mostly use coconut oil healthier options, I am on day 26 of your 28 day challenge and I am feeling great so thank you for inspiring me I have done a 28 day juice fast before 7 years ago after being inspired by Joe Cross, keep up spreading the juicing message

    Jason you realy don't have to peel butternut squash. Just scrub it. Roast it like you did with pepper recipe ( As it does bring all flavour out) same with carrots just scrub with nail brush. Roast ALL veg . Then pop in pan when cooked. Put water in bring to boil add ya seasoning .simmer few mins. Take off heat and blend .. you'll never look back!! You don't NEED stock too much salt in them . Just add onion powder and pepper n pinch turmeric. ❤👍

      Add chilli into the bottle of oil and it will infuse

    Isn’t there normally msg in stock cubes?

      I use a good quality vegan stock powder (Bouillon powder) that contains no msg 😊 Amy@JuicyHQ

    Can this be done with chopped up broccoli?

      Sure. The only thing to watch out for is if you mix green and orange veg you will likely produce something brown looking ... Most people taste initially with their eyes so this may not appeal to all 🙂 Amy@uicyHQ

    What kind of veg stock do you use?. I can't find organic veg stock 😞. If i use normal one is it healthy?

    Just to let you know, on the list of ingredients below, you've listed 1/2 small red onion instead of 1, gonna make this tonight me thinks!

    Why do you peel the carrots? The goodness is near the skin isnt it

      Yes, I always just give mine a little wash and leave the skin on. In this instance Jason peeled his, it's up to personal preference I guess. Amy@JuicyHQ. X

      @@juicemaster Wouldn’t Olive oil be a better choice?
      Vegetable oil is Highly processed. (the least processed form is extra virgin)
      Olive oil is also : High in antioxidants, where Vegetable oil isn’t.
      Coming from someone that suffers with Gout, I can say “Vegetable Oil is a big No, No.” (But Olive oil is good)
