    The filling has a few missing spices, but I guess darjeeling ones are less masaledar than Kathmandu Momochas.

      You can mix a little bit of chicken skin as is contains a lot of fat in it.. or simply use some buff fat..
      Fat/oil makes the momo fillings soft.

      It's made with raw meat for your kind information.... I don't know from where you have assumptions about cooking the meat before stuffing, it won't bind. Authentic momos are made this way.

      The meat needs to be cooked well before consumption.. 20 mins works best for me.
