Christmas cookies / healthy cottage cheese cookies

  • Healthy Christmas Cookies/ Cottage cheese cranberry cookies
    1 cup of cottage cheese
    3.5 cups of almond flour (350g)
    1/3 cup white sugar (70g) ( or sweetener of your choice )
    2 tablespoons of cold butter ,cubed
    1 teaspoon of pure vanilla extract
    2 tablespoons of corn starch
    1/2 teaspoon of baking soda
    1/2 cup of dried cranberries
    For the top
    1.5 ounce of dark chocolate ( I used 80 %)
    1/2 tsp of coconut oil
    2-3 tablespoons of ground pistachios
    Preheat your oven to 350 degrees Fahrenheit and line 2 large baking sheets with parchment paper.
    In a food processor, add cottage cheese, butter, sugar, vanilla extract, baking soda and cornstarch. Process on high speed until you get a smooth consistency.
    Pour the mixture into a bowl .Add the almond flour and combine with a spatula.
    Choppe the cranberries and add it to the cookie dough.
    Using a small scoop, scoop cookie dough onto prepared baking sheets 1 inches apart. Then flatten a bit into small discs using an oiled spoon.Clean your spoon after a few cookies so it doesn’t stick . Cookies won’t spread much .
    Bake for 12 minutes and remove while cookies appear underbaked, puffy and light in color.
    Let cookies cool on a baking sheet for 10 minutes before transferring onto a cooling rack to cool a bit more.
    In the meantime, melt your chocolate with the coconut oil in the microwave. Be careful not to burn the chocolate. Start with 20 seconds and then 10 seconds each time until the chocolate is almost melted. Stir till all the chocolate is melted .
    Dip the corner of each cookie into the dark chocolate. Place it into a plate with parchment paper. Sprinkle with ground pistachios before the chocolate set onto the cookie.
    Keep it in the fridge for 3-4 days or freeze them for later . If there is any left . They will go fast .
