Looks delicious! Am definitely making this. You don't have to boil the almonds to get the skins off. Just soak them in water for 4 or more hours & they come right off. I do them overnight as we make our own almond milk. The less heat, the more nutrients remain. Merry Christmas! USA here.

Divinity!!! My grandma made it every year. She would always butter a huge platter, and set ontop of a washtub filled with snow --had to be sure no water got on the candy. We used a similiar route for scratch fondant.
My mom used to make divinity. I love it too much to make. Grew up addicted to sugar. Now I use dates or coconut sugar and mo flour

In the American South this is called Divinity.
We usually don't use honey, just sugar, and the sugar mixture is poured into the egg whites very slowly and mixed in. It stays fluffier and isn't as dense.

We have this exact snack in Turkey. We also add hazelnuts (Thinly sliced) and dry apricots (In small cube forms) too. And sometimes put light biscuits to its two sides like a sandwich. I had no idea it was this easy to prepare. Looks amazing!

I'm from Mexico, my great grandmother's sisters in law were from Spain. I remember every Christmas time, they gave me and the other children of the family this candy because they said on xmas it received too this in Spain, when they and my great grandfather were kids. That's what I kept saying! I don't bake since I moved to Cozumel, Mexico. Small kitchen, sold all my kitchen equipment before we left the US. But there are plenty of bakeries and people who will make just about anything for you here! I'm blessed! 🌺

Es una receta de turrón español de almendras, tipo Jijona. Hay otra con las almendras molidas que se conoce como turrón blando, y este es turrón duro.
Lo que ocurre es que el turrón español se endurece. No se queda chicloso.

El Turrón de Jijona es sólo con almendra, como dices, pero esta tiene que estar molida (popularmente es "turrón blando"). Si la almendra está entera se denomina turrón de Alicante (popularmente "turrón duro") 🙂😉

If you add the hot mixture slowing into the egg whites instead of the other way around, your egg whites won't scramble.

I'm watching from the Isle of Wight, UK. The egg sugar mixture looks like Italian meringue. So I added the sugar syrup to the egg whites over a ban Marie and it worked really wel. Such a lovely sweet treat.

USA here .... we used to make a version of this way way back in the late 60's early 70's, I suspect the recipe came from my grandmother on my mothers side from the homeland Germany, the old wood burning cook stove and oven at my gramps, I remember we poured it out a little thinner, maybe due to the corn syrup we used but we poured it out onto wax paper on baking sheets, nuts were crushed up as well, poured out about 1/2"-3/4" thick layers, oh boy as many baking sheets as we had and that was 3 if my memory serves, then cut into 2" squares and powdered up with confectioners sugar, that was my job.. :-)
I remember as my mother got to working all the time and my siblings older I was the only one who made it one year, all by myself everyone else gone out doing things I am 10-11 or so, then after that christmas I never made it again and forgot all about it till today..
my Ma was a good baker, she made it all when she wanted and had time, I suspect she learned all that from her mother and it was passed onto us kids, I remember cooking or preparing food for myself since I am 5 or so, maybe earlier just cant remember that far back but making sammiches, chocolate milk, soups, easy stuff.. this reminds me of christmas when I was 10ish, putting the lights up on the roof, the tree, snow, going sledding, all that... man I sure hope they figure out how to make a time machine while I'm still around... Merry Christmas All...

In my experience Divinity is much lighter and more delicate. I’ve never had homemade torrone but I buy it sometimes and do like it a lot. The only thing I like as much as homemade divinity is a good homemade praline. Sadly, I’m terrible at candy making. Actually, that’s probably a good thing or I’d weigh 300 lbs!

This is a very delicious n healty recipe it can be made with different varieties of nuts n fruits. Tip; for easy removal put container in a hot bath for a few seconds or use a towel thats dipped in hot water, same for the knife 😊😊, love n blessing from Jamaica❤.
