I've been making "curries" from so-called authentic Indian cookbooks for over 30 years but your recipes take me into another dimension. I have to admit that I added some chopped peppers and king prawns instead of the chicken to the recipe and after a couple of glasses of wine and tasted it, I was in ecstasy! The best BIR dish I have ever tasted and I'm extremely proud of it, all due to you. Thanks Al, you're the greatest!
Second recipe (after the chasni a few weeks back) that I've tried and it's absolutely banging. I did more garlic and used cayenne instead of chilli powder, and three teaspoons of chilli paste instead of fresh chillies - but other than that everything the same and it was bang on. Lovely soft garlic and enough of a kick to sting the lips but still able to taste the sauce. Beautiful.

Just made the base gravy and chicken tikka this morning and now made this. It's soooooo good. I plan on freezing the gravy in batches but would be great to know how much I should freeze in each batch to prevent wastage. Would also be great if you could list the ingredients somewhere so I can prepare them first without having to keep pausing and going back. Keep up the good work fella.

Made this last night, it’s my new favourite curry dish, great heat (I did add extra hot chilli powder) and I added green chilliest to the base gravy. Al your costing me a fortune - just ordered Indian serving bowls to match my new dabba, but it’s well worth it. You given me a new skill, thanks Al.
Al YOU ARE THE MAN!!!! For about 20 years I have been trying to unlock that BIR taste at home. I’ve made base gravies, mix powders etc and made some nice curries but never one I could have mistaken for a good takeaway. I just made your base gravy 2 and mix powder and knocked up a garlic chilli chicken and it was outstanding!! If I had ordered that from a takeaway, I would make it my new regular. The whole dish had that pungent goodness that I don’t know where it comes from in a good BIR but you miss if it’s not there. Thank you so much 😀

After many years in the home making curry wilderness, I came across Al’s Kitchen. What a revelation!. I made this dish tonight for my curry loving family. They are harsh critics by the way. For the first time ever, I got a round of applause. Thanks Al, I now have a much deeper appreciation of how a great curry comes together,. It can’t be rushed or bought, it takes time and much enthusiasm. Keep them coming. If you ever hold a master class, can I get a front row seat?

I've been making the tom puree from Latifs channel and frozen in icecube trays. Quite a bit involved for a small addition but I enjoy making it. This recipe has no ginger and I've seen a few people leave the ginger out here and there, I've yet to try. Must be a bored Palace fan online to of thrown in a thumbs down so early :)
I started watching because I wanted to see what John Robins described as your 'panache'. Must admit I am impressed. May have to ask my mum to start the paperwork to make you an honorary Indian.
Al, understand that you make individual curries as restaurants do, but if I'm making for 2 or more people, is it simply a case of doubling, trebling quantities etc? Or do I need to have several pans on the go at once? 🤔 Cheers.

Thanks again though, never been able to make 'proper' BIR style dishes before let alone this particular dish and it's bang on. I will always support my local takeaway but its great to know I can do somthing just as good when the funds are a bit tight.

I tried this exact recipe, except for the curry powder, I used tandoori chicken powder instead. But the overall taste was lipsmacking 😘 so... a great thx for this simple and fun recipe 👏

That beer is an Aldi Ale brewed by Harper's. Basically their version of a hobgoblin and pretty good stuff.
i haven't had a hobgoblin since I lived in brighton in the 90s!
Hobgoblin is a great beer. Never had it with a curry but would imagine it goes really well
