Spicy Miso Carbonara

  • Spicy Miso Carbonara
    Ingredients
    * 5oz guanciale or bacon
    * 1/4 cup shallots(minced)
    * 2 tbsp garlic(minced)
    * 5oz shimeji mushrooms
    * 3/4 lbs udon noodles
    * 1/4 cup udon water
    Sauce
    * 1 egg+2 egg yolks
    * 2 tbsp miso paste
    * 2 tbsp gochujang
    * 2 tsp gochugaru
    * 1 tsp black pepper
    * 1.5 cups Parmigiano Reggiano(grated)
    Instructions
    1. Prepare and cut shallots, garlic, shimeji mushrooms, and guanciale.
    2. Combine sauce ingredients in bowl.
    3. In a cold pan, render the guanciale on medium low heat until crispy(5-6 minutes).
    4. Remove the guanciale and sauté the shallots and garlic until fragrant(3-4 minutes).
    5. Add the shimeji mushrooms and cook for an additional 5-6 minutes.
    6. Boil udon noodles according to package instructions making sure to save some of the udon water.
    7. Turn the pan to the lowest heat and add the udon to the pan along with the sauce.
    8. Mix vigorously adding in the udon water until it is nice and creamy.
    9. Add in 1/2 of the guanciale and mix.
    10. Plate it up and garnish with an egg yolk, guanciale, and more parmesan cheese.

      ​@@SilverReviews Even tomato-based Italian dishes are technically fusion foods. Tomatoes are native to the Americas. Same with potatoes, eggplants, chilli peppers, etc.

      @@brutalhonesty6742 Carbonara is an Italian dish while Miso is generally used in Japanese dishes. The noodles themselves are culturally ambiguous but combining two distinctly different cultural foods is what they were referring to.

      Since you're curious about an Italian's opinion, here is my take: I wouldn't call it Carbonara but whatever it is, I would be very happy to try it.
      And yes, even if it's not Carbonara I would have been heartbroken if he added cream. It would have normalized and toned down a lot of the notes that he added to the dish.

      @@carloinnamorati5897 sure, it's not carbonara but it is miso carbonara. fusion food exists otherwise a lot of your "traditional" dishes in italy wouldn't exist how they are. tomatoes weren't even introduced to italy until the 16th century lmao

      @@SilverReviews You make very good points and I agree with you for the most part. That being said, today like never before, cultures around the world are rapidly approaching the same point. Globalization is happening very fast. In a few generations, lots of cultural aspects will disappear.
      I'm all for fusion style food, as long as it makes sense and is an interesting variation (such as the one shown in the video - I love the idea). The reason I wouldn't call it "Miso Carbonara" and maybe something along the lines of "Roman style Udon" is that Carbonara is a very specific dish, which is similar to many other Roman style pastas that have completely different names. It's akin to saying you're making Seiten Big Mac instead of saying you're making a Seiten Burger (it's an exaggeration but you get the point).

    Its scary how it actually has the real carbonara base, usually people say "its my version" and it has NOTHING to do woth carbonara, this actually is carbonara but with added ingridients which makes it his own version for real.
    Thumbs up for a cool non traditional version that still respects the base of it!

    This looks like an umami winner and besides - many Italians love Korean food, seems to be one of those randoms - spicy tekbokki is also appreciated as Korean gnocchi from what I've seen.

    The horizontal cuts on your half onion (your first step) are completely unnecessary. Onions have layers. It’s like slicing an already sliced bread.
    Unlearn it, your onion dicing would be faster and the onion dices would be more beautifully even.
    Too many cooks and chefs learned that specific (wrong) way and never questioned if it was right
