If you’re ever in Tokyo you should try Shin Udon, which is kind of a carbonara udon variation, made with Japanese fermented butter (so the tang adds a beautiful acidity to balance out the creaminess) and they add the bacon as a thick-cut bacon tempura. Would love to see you make a copycat!
