Original Xbox - POUND cable with Fable

Help me fix my resolution and image quality with the POUND cable.
It doesn't allow 480p with the game, Fable.
I'm using an Original Xbox with:
Pound cable, for better image quality.
Elgato Game Capture HD, for footage capture.
Fable. Softmod ripped onto my hdd.
The disk version always shows poor quality but during my first time running the ripped version, it was in good quality. I want to know how to achieve that look again.
