That "fresh sambal" it's called sambal Matah and it's originated from Bali. They chopped up some Bird eye chillies, shallots, lemon grass, and lime leaves. After that they dunked some hot oil and mix it up together, they usually use palm oil instead of coconut oil. One of my favorites Sambal here!

YOU ARE TO THE RIGHT PLACE! actually there's 2 JImbaran seafood spots. one is popular among domestic tourists, which is more modern, cleaner, yet more expensive the one you came is the more traditional and where the locals go when they talk about jimbaran seafood. I, as a local, verify this to all of you.
Ah yes, the overpriced seafood warungs at Jimbaran Bay...I'd rather buy fresh from Kedonganan market and have the nearby warungs to grill them. Better yet, I go to Amed, Tulamben, Padangbay or Pemuteran for their freshly caught seafoods. Edit: Let me clarify, Overpriced ≠ Expensive. They aren't expensive, they're just overpriced, some people in this thread think they're the same when they're not. Expensive is about affordability, overpriced is about value.
@@wu_weichun idk about after the covid, but before, this was a tourist trap with heaps of bad reviews and stories people experienced. Padangbai, Amed, and Pemuteran are also touristic places, but not as crowded as South Bali and rather nicer for those who like to find peaceful places with genuinely friendly services by the locals.

I’ve ate all over Asia and love the street food, however I found Indonesia the most risky place to eat ‘fresh’ seafood, the strike rate for eating seafood and belly issues was higher for me in Indonesia than anywhere else I ate in Asia , Thai, Burma, Cambodia, lao ,Philippines etc spent many days recovering after some dodgy seafood in Indonesia
As Indonesian, you need to grow some immunity ,folks... j/k. Actually this is why we usually eats it with Coconut water like what mark did here. But in this place particularly the food will be mostly fresh because north of it is the biggest seafood market in Bali where the fisherman sold their catch directly to the customer. You can also shop in the market ,pick the freshest fish you can get, and go to the restaurant and ask the restaurant to cooked it for you ... Its a win win

Most likely you did not wash your hands properly. Properly cooked seafood cannot give you a stomach infection. No reason to point fingers at Indonesian seafood.
Loves fish more than other seafood….loves the spicy sambal rather than the sweet tomatoey one….yeah Mark and I have nothing in common as far as taste in food goes.
