- It’s rhubarb season so we will make a rhubarb zero waste cordial (and ice cream, and lemon powder) and a nice, refreshing gin cocktail with all of that. Perfect cocktail for surprising your mom on Mother’s day or anyone really in the upcoming summer days. Find the recipe for everything we made today down below.

Rhubarb cordial:
· 80 g Rhubarb stalks
· 150 g water
· pinch of salt
· 1 whole strawberry (mine was 25 g)
· 1,25 g lemon peel
· 80 g sugar
· 0,6 g pectinex
· juice of one lemon (peel it first)
· 3 g citric acid
Cook the rhubarb stalks in water with a pinch of salt for 3 minutes on medium heat. Add all the ingredients to a blender and blend it thoroughly. Leave it to sit for at least an hour then strain it through a really fine strainer. Use the purée to make ice-cream.
Rhubarb soda:
· 60 g Rhubarb cordial
· 240 g water
Chill both in the fridge and carbonate the mixture with your preferred technique (I used a home carbonator).
Ice cream:
Mix all the leftover purée from the cordial with full-fat yogurt (half the weight of the purée). Add gin (go for 10% weight of the mixture) and mix it thoroughly. Freeze it in a freezer.
Lemon powder:
Dehydrate the leftover lemon peels in a dehydrator for 3 h at 70°C or 155°F. Grind with a mortar and pestle to get a nice powder. Add to the side of the glass for some extra lemon flavor.
Rabarbarosa:
· 50 ml (1,66 oz) Malfy gin Rosa
· 100 ml (3,33 oz) rhubarb soda
· 1 drop of saline solution

My mother-in-law usually makes "kompot", or preserved rhubarb, cooked with water and sugar and sealed in a jar for future use.
Rhubarb pie is delicious and a staple in my grandma’s house growing up! Yum!
Apple and rhubarb crumble with lots of hot custard. Yum!
I experimented with rhubarb and strawberry fruit leather. All natural, no added sugar, delicious.
Rhubarb and strawberries are a match made in heaven!!

Hey Kevin ! I have a question for you ! I want to do your recipe but i want to subdue the rhubarb and strawberry cordial by a lacto-fermented rhubarb and strawberry sherbet ! Do you think i will achieve the same acidic/tart to sweetness ratio ? Thanks a lot cheers

I love rhubarb so I’ll be shopping for some tomorrow :) I never would have bought (or known about) pectinex or agar if it wasn’t for you guys, now I get to show off when we eventually have people over again, so many new techniques! I don’t actually have a dehydrator, do you think the same temp would work in an oven for the lemon peels?
So happy to hear that! You can do it in an oven too. Just set it at the lowest temperature possible.
Wow this is super cool. Just don't have a way to make carbonated drinks. I want to think of ways to use the cordial! To your question to rhubarb, I love making strawberry rhubarb pie! One of my favorites in both childhood and adulthood!
You can try to make any gin, tequila, vodka.. sour with it, or just mix it with sparkling water for the same cocktail I did. I am glad that I bring back some of your childhood memories. Thanks a lot!
If you've got a soda siphon, you can carbonate any cocktail you want! Works best with clear liquids! 👍
Have you heard of the Drinkmate? It’s designed for carbonating pre mixed liquids. You can even add the spirit before carbonation.

Greetings! It's a vacuum machine bought in Aldi (Hofer in Slovenia) and it's one of the cheapest ones out there. It doesn't seal liquids, so I have to be careful with vacuuming/sealing, but it gets a job done just great. Thanks!
Got a question: if you mix the cordial with water before carbonating, why even go through the hassle and not just mix it with carbonated water in the first place?
That would be a better idea for sure.

Using a carbonator like that is dangerous. The sugars can go back into the machine and get really sticky, which causes the mechanical parts to not operate correctly. The last thing you need is a faulty pressure release valve... Ka-Boom! o0
