I do a banana oleo saccharum and coffee grounds cocktail too! Since the cocktail "Monkey's Lunch" is based around Kalhua and Creme De Banane, we call ours the "Monkey's Trash". It's, uh, a little less sophisticated than your take. I gotta give your take a go one of these days.
This can be totally zero waste, the spent banana peels can be baked on low temp till crisp to make candied banana peel to snack on or use as garnish! They taste really nice.
@@claytor920 for the cafe, monin makes a banana puree sauce and I mix that with caramel. But you can caramelize bananas in sugar on the stove then blend and stain out the checks if you want more control of the caramelization
Hey Dan! With these saccharums, how long would you expect them to last? I'd love to experiment, but worried that they would go off or worse if I didn't use quick enough! Absolutely love the vids mate. 👍
Thank you! With the addition of alcohol, I have had mine in the fridge for a few weeks, but the Banana Saccharum especially is best pretty quickly! You can make really small batches very easily though, which should avoid waste.
So excited to watch after seeing your take on Parmesan espresso martini. Love banana flavor and seeing things like banana coffee in the anime Tower of God had me trying to infuse with banana peel+meat 😂. 1 min in I already know you’ve done a better job
Does the syrup itself freeze well? Could be easier to make a larger batch and only use smaller portions at a time, similar to how super juice freezes well.
@@DANFELLOWScoffeecocktails I was thinking if you put a couple of drops of citric acid solution which is a natural preservative, wouldn't it live a bit more?

Sounds delicious!
Ask your local coffee shop to put out their coffee grounds for sprinkling on the compost heap (never on the garden).
How long did you infuse the discarded banana peel rum in the coffee grinds??? 8)
Is the acid solution a total of 9.99g of acid mix + 100ml water?

Love that!
I love bananas and coffee. I just created a bananas foster latte for a seasonal special where I work. It was super popular
That sounds interesting. Care to share how you incorporated the banana? I know this is an old comment but I thought I'd try asking.

I throw on the compost heap. No waste.

Do you think you could sub in the same volume of lemon juice instead of the acid blend??
I am so doing this! I already have a banana peel cheong ready! ❤
Niiice :D

I haven’t tested this specifically, but I expect it would freeze fairly well.
Really nice vid and super impressed with the slayer…
Please can you tell me what scales you are using?
Thanks so much! Sure thing, it’s an Acaia Pearl… geni.us/JhYi1F
with what do you recommend to wash the outside of the banana 🍌 prior to using peels? Thx
Absolutely! I always recommend washing fruit before use, great point!
loving these recipes, have you had any success using sugar alternatives?
Thank you! I have actually never tried, but I will!
This is just next level! I'll also lick the glass in public.
I did, and I don’t regret it! 😂
you are on a-whole-nother level. looks incredible!
Thank you!
Just be careful not to take a bite of the glass! 😂
Sensible call!
Love that idea
Thank you, it actually works with lots of fruits and other often wasted ingredients so stay tuned for more!
how long does this last in the fridge?
Only a couple of days really, but you can make a super small batch size to avoid any excess or waste 🙂
