I just made greens for the first time in my life using your recipe even though i fell short with a couple items i tweaked it and adjusted a few things and it still came out perfect i had 5 bunches of greens and used 4 cups of chicken broth filled the rest with water and i used 4 turkey legs instead of 2 and everything was a hit thanks to you ❤

Have you tried the fried greens version? All we did was after the greens were washed for last time (usually 4x) we blot dry the greens, fry some bacon, put bacon on a paper towel to drip dry, lower the heat in the skillet enough to be able to lightly saute' the greens. If some of the greens get a tad crisp is ok don't disgard. Next we prepare the greens similar to your recipe, instead of chicken broth we used pork broth or beef broth, crushed garlic, diced onion & a mild/medium heat chili pepper (we used serrano) finely chopped. And like you said in the video, depends what part of the south you from whether you use the chili pepper. And when our cousins had a good catch, we would also add seasoned crawfish when we added the bacon. I usually make mine without crawfish unless I make greens for Easter or thanksgiving then I add the crawfish as a holiday special treat 🥰

Since fatback isn't healthy, I don't use it now as an adult. I use smoked turkey as a sub and it's always tiny green peppers because they're spicy as hell. Thanksgiving I'm having cornbread dressing, greens, turkey, turkey gravy, cranberry sauce, macaroni and cheese, yams and chess pie.
2 ingredients that take greens to the next level are: fresh ginger and diced green bell pepper. Please try this. I use all of your ingredients except the bacon. While boiling the smoked turkey , I julienne the ginger and let it boil with the turkey. I serve them with a jalapeño- cheddar cornbread with toasted cumin seed.The ginger adds such a brightness.

Made this and it beats my old recipe, followed everything except cooked for close to 2 hours. Only issue I had was that I used reg chicken broth cause that's what I had. I suggest low or no sodium or better yet 4 cups broth and 4 cups water. Will make it again... And put a potato in the rest to get that salt out 😁

What is sad, is that when many people think of southern or soul food, they think it's all chicken based. Reality is that 90% of southern and soul food is pork based.
That’s because soul food was originally by enslaved Black people and white people just decided to change some of the recipes to make it into “southern” food.

Those are not southern collard greens. Vinegar is a condiment usually served with hot peppers. I grew up deep south and that not. You don't use bacon if you are using smoked turkey. Turkey is for people who don't eat pork.

It certainly can be adjusted. Here’s a suggestion add the salt add the end of the cooking process. Us no salt chicken broth or water.
