My very early tutorials were filmed on a camera without a separate mic, so there may be a slight noise👍
If you're listening on low quality headphones/speakers, then that exacerbates it. My tutorials from the past couple of years are much better quality. It's a good job they're free for you isn't it? ;)

And the sustain pedal, is that to be kept down throughtout the whole piece or should we try and experiment?

Don’t keep the sustain pedal down entirely for any piece, it doesn’t sound great. Instead you could refresh the pedal on every chord change.
