Just gotta say, i LOVE that you don't put any music in your tutorials. I know its a small thing and may seem insignificant, but I like listening to my own choice of music whenever I'm doing blender/unity/avatar work. and i dislike how it clashes with music in other tutorials XD
Literally the exact reason why! I also listen to music when doing anything. So having to turn it off to watch tutorialls makes me go read the docs instead

This could be due to 2 things Either you need to apply transforms + armature modifier prior to merging Or You are selecting them in the wrong order (order of selection is VERY important in blender)

I cannot use cats to merge them as when I do, if I move into pose mode they arent attached. I can ctrl click both the ears and my body and join them. and when I move to the bones, the body armature is unselectable if I select the ear bone I need. so those dont work either.
