Ahh that's funny I noticed that too, a little sizzle that's just right. :)
I learned that the job must be done with 2-3 persons and in stages so that no one interferes with the dedicated tasks. 1. Make the smoker table with rollers and Cut out all the openings and necessary pieces.( including the wheel cart assembly). (1 day) 2. Weld the pieces to the appropriate openings including hinges and offset firebox. (1 very long day) 3. Test and adjust the moving parts of the BBQ pit making sure they open and close well. 4. Set a giant fire in the pit to check for hot spots and smoke (heat) leaks. Rechecking moving parts so they don’t stick. Invite your friends to come and taste test your team’s 500 gallon work of art.
In his next video, Aaaron will show us the forest he grew to get the special smokey flavor his restaurant is known for.

I smoked a top round rest yesterday. It was good. I kind of chuckled when I read a recipe for that and it said that since top round is lean it needs to go low and slow, say 225 for 2 hours. I was like wait. 2 hours is slow? I cook my pork shoulder at 225 for 7-8 hours. Brisket at 225 for 10-12 hours. The last one only took 8 but it was small. Anyway I cooked it for an hour at 300 because I putt too many coals in my smoker and it was medium and smokey and delicious. I made everyone at work jealous today because I brought some for lunch. They are going to hate me tomorrow though, I had a half tub of Coke slaw with it. I am lactose intolerant to a degree and cabbage has all those lovely sulphur compounds. Thank you for the videos and I hope you are staying dry down there. Maybe one day I will come to your restaurant and try some real brisket.

I met Big John in @ 1995, he had a metal shop,lived in Rooseveldt lake az area, and built bbq smokers of high calibre and quality( like Aron Franklin). new orders came from previous sales. Big John also loved to cook, and was very good at that also. during the heat of summer , he often closed his shop, and followed the county fair selling bbq,.......... You could do it also.

Try heating only the inside of the rod where it is to be bent, you will get a lot less distortion-stretch on the outside of the bend

Hey Franklin Love the videos u post and dream of the days i get my two smoker projects finished however i just started my first one today after a few months of studying online and gathering all my materials. Now I took the advice on your 3/4 dom tube and 1/2 round for the hinges and the round isn't quite snug in the 3/4 dom, is this the same situation with your pieces and if so I guess thrs nothing to worry about,? I thought they would be a snug fit but am a bit worried now that they arent, if you could chime in here for me that would be amazing as i'm hoping to take advantage of the beautiful weather tomorrow up here in ontario canada. Thanks, Drew.

I'm making my own smoker from a 150gal tank, and I want to paint it. I found some rustoleum 2000° paint, but it only comes in spray cans. I'm looking for a high heat paint I can apply with an automotive type paint gun. What do you recommend?

Franklin, I have the same Ranch Hand bbq side box smoker you used making that beef jerky. I noticed your side fire box has the same rust spots as mine. I was wondering if you could show us how to treat those rust spots and or get rid of it. Id like to make it look a lil nicer if thats possible.
I bet you could wire brush that rust off and then paint it with high temp paint. Just make sure to fire it up to volitalize any nasties before you cook food.

I could have sworn there was a video of him finding the tanks, cleaning it up and turning it into a smoker. He probably removed them cuz somebody blew themselves up not being careful.

what is the thickness of the tank?
Love the vids aaron thanks. Hey quick opinion check. I have noticed a lot of central texas cookers are rectangle with a flat lid vs. your propane tank/ round build pits. Why the round pit vs. the rectangle/square? Is there a difference? availability i guess? My pit is a round piece of 24" casing. Thinking about going rectangle next time around..
I venture a guess that corners are bad from a heat and gas flow point of view since you could get dead spots that don't contribute to your cooking and cost you more fuel but fabricating out of plate is cheap and simple especially the larger you go.
+X Padilla the reason I asked this is because so many of the old standbys like coopers, the Lockhart folks, and many others use rectangle pits and their q is great as well. Just wanted to hear Aaron's opinion.
Yeah, I understand. Just my opinion as a mechanical design engineer who designs big industrial furnaces and pressure vessels. From a CFD standpoint square profiles are not as good good for gas flow or higher pressure but of course there are plenty of rectangular ducts in the world because they are cheaper to make.

I don't think that is as important. Anything that will allow you to make a 15ish degree bend about 2 inches down.
Does the health department have to inspect them and pass them? Just wondering what you run up against in that area?

Where's a good place to get surplus propane tanks?
+Clifton Hall Scape yards and propane supply companies might have some junker tanks. If they don't, they might be able to tell you where they send their damaged tanks.
